If you are looking for a recipe that is a little on the lighter side, we’ve got something that just might interest you – Thai Peanut Salad (follow the link to skip right to the recipe)- The recipe calls for flank steak but we decided to try it with chicken as well to have as an alternative. Here is what you are going to need:
- 1 Flank Steak
- Spinach or mixed greens
- 1 Red Bell Pepper, sliced
- 1 Orange Bell Pepper, sliced
- 1/2 Cup Sliced Red Cabbage
- 2 Avocados, sliced
- 1 Carrot, sliced thin
- 1 Cucumber, peeled and sliced
- 1 Jalapeno, sliced
- Sesame Seeds
- 1/2 Cup Cilantro, chopped
- 1/2 Cup Peanuts, chopped
- 2 Tablespoons Green Onions, sliced
- 1 Avocado, sliced
First step once you’ve gathered your ingredients – Prepare the Thai Peanut Sauce by combining the ingredients.
- 1 Cup Peanut Butter
- 2 Tablespoons Sriracha
- 1/4 Cup Fresh Lime Juice
- 1/4 Cup Honey
- 2 Tablespoons Toasted Sesame Oil
- 1/2 Cup Warm Water
- 3 Tablespoons Fresh, Grated Ginger
- 6 Cloves of Garlic, minced
- 1/3 Cup Soy Sauce
- 1 Teaspoon Rice Vinegar
Once combined, place your meat of choice (flank steak or chicken) in a container and pour half of the sauce in the container to marinate the meat. Place container in fridge for 1-2 hours.
*In this blog we doubled the ingredients needed for the sauce so as to do both meats. The ingredient amounts listed above will only be enough for one recipe.
Next up, prepare your Ginger Dressing
- 1 Tablespoon Fresh Ginger, grated
- 2 Cloves of Garlic
- 1/4 Cup Soy Sauce
- 1/2 Cup Oil
- 1/4 Cup Rice Vinegar
- 3 Tablespoons Honey
- 1 Tablespoon Water
- 2 Tablespoons Peanut Sauce from above
Once your Ginger Dressing is mixed together it’s time to slice your veggies
Next up, pull your choice of meat out of the fridge and sliced it lengthwise into small strips.
Heat a skillet over medium high heat with a small drizzle of oil. Add the meat to the skillet and cook, tossing occasionally until cooked, about 3 minutes per side. Remove to a plate.
Once the meat is cooked it is time to assemble. Toss your greens and vegetables together with the ginger dressing. Top your salad with you meat, avocado, and peanuts and any extra ginger dressing you want to add. There you have it, time to eat. So which one are you going to try first – Chicken? Steak? Both?
