Enchilada Meatballs are my new favorite creation 😊 They taste just like the real thing and have amazing Tex-Mex flavor.  They are tender, juicy meatballs made from ground beef, ground turkey, or ground chicken (you pick), topped with a mild enchilada sauce, beans, corn, and plenty of melted cheese.  Super yummy and super customizable. The recipe can be found here. Start by preheating the oven to 375 degrees F, then prepare all ingredients: mince the garlic, chop the cilantro, onion, and jalapeno, drain, and rinse the black beans, and drain the corn.  Set all aside until ready to use. Add the ground meat (beef, turkey, or chicken) to a mixing bowl, along with the breadcrumbs, egg, garlic, cilantro, chili powder, cumin, dried oregano, salt, and pepper.  Mix until well combined.  I like to use my hands to really mix everything together.  I find it works better than a spoon but do what you prefer.  Then use a cookie scoop (or your … Continue reading

Breakfast Enchiladas are a great way to start your day!  Enchiladas are tortillas that are filled with various ingredients, rolled up, covered with sauce, and baked to perfection.  For my Breakfast Enchiladas, I’m swapping a typical enchilada sauce for whisked eggs, and filling the inside with cheese and diced ham. These Breakfast Enchiladas can be customized to meet your taste preferences.  I used diced ham, but you could use bacon or sausage.  I used white onion, but you could substitute with bell peppers, mushrooms, spinach, etc.  Really make these your own and use the recipe below as a guide for quantities! Last night we tried our hand at Vegan Vegetable Enchiladas.  The difference between these enchiladas and “traditional” enchiladas is the lack of meat and dairy.  We substituted both with vegan alternatives.  I’ll admit, the end result doesn’t look very pretty but it tasted amazing! These are packed full of vegetables and have incredible flavor.  We replaced ground beef with chopped mushrooms, added additional vegetables, and used a vegan cheese that tastes very similar to provolone.  If you did a blind taste test, I don’t think you would be able to tell the difference! This year, Cinco de Mayo falls on a Tuesday, which is also known as Taco Tuesday, so this is basically the best situation ever!  Maybe I’m stretching a bit, but it gives us something to look forward to and celebrate in light of being quarantined. How do you plan on celebrating?  We are going to enjoy a nice Mexican themed dinner with all the fixings!  Here is the menu: Spicy Homemade Tomato Salsa Salsa Verde Chicken Enchiladas Homemade Churros with Chocolate Dipping Sauce Frozen Pineapple Daiquiri   We’re going to enjoy a “Trio of Dip” with Guacamole, White Queso, and Spice Homemade Tomato Salsa.  This will be something to snack on while we cook and also to enjoy with our meal.
