These are my new favorite meatballs!  So easy to make and incredibly tasty!  I have a “don’t knock it until you try it” mentality when it comes to plant-based food.  A lot of it sounds weird but ends up being a winner in my house, so if you are willing to try something new, please give these meatballs a try. They are tender and juicy, packed with flavor, and come together in about 30 minutes.  You can use either the Impossible or Beyond Meat brand, I’m just partial to Beyond Meat.  They do have slightly different textures and tastes but when you combine them with the rest of the ingredients you probably won’t tell a difference. Enchilada Meatballs are my new favorite creation 😊 They taste just like the real thing and have amazing Tex-Mex flavor.  They are tender, juicy meatballs made from ground beef, ground turkey, or ground chicken (you pick), topped with a mild enchilada sauce, beans, corn, and plenty of melted cheese.  Super yummy and super customizable. The recipe can be found here. Start by preheating the oven to 375 degrees F, then prepare all ingredients: mince the garlic, chop the cilantro, onion, and jalapeno, drain, and rinse the black beans, and drain the corn.  Set all aside until ready to use. Add the ground meat (beef, turkey, or chicken) to a mixing bowl, along with the breadcrumbs, egg, garlic, cilantro, chili powder, cumin, dried oregano, salt, and pepper.  Mix until well combined.  I like to use my hands to really mix everything together.  I find it works better than a spoon but do what you prefer.  Then use a cookie scoop (or your … Continue reading

Chicken Meatballs with Homemade Spinach Alfredo Sauce is a hearty and rich meal your whole family will love!  The homemade sauce is deliciously creamy and is paired with crispy, salty bacon, tender, cooked spinach, and flavorful chicken meatballs.  The chicken absorbs some of the sauce and flavors while simmering making them super moist.  It’s a savory dish you won’t want to miss out on trying! Lettuce wraps are one of my favorite go-to recipes for a hot summer day.  They are light and packed with fresh flavors, leaving you satisfied without being overly full.  I want to share my recipe for Asian Chicken Meatball Lettuce Wraps with Mango & Coleslaw with you today.  The nice thing about this recipe is it’s really 2 recipes in one.  You can eat the Asian Chicken Meatballs as is or turn them into delicious lettuce wraps.  My preference is to create lettuce wraps but the meatballs pair well with rice or steamed vegetables if you are looking for something more comforting during cooler months of the year. St Patrick’s Day is fast approaching.  Do you have plans to celebrate?  I’m admittedly well past the years of bar hopping downtown to drink some mediocre green beer in an overcrowded bar…. Halloween is fast approaching – are you ready? We sure are. Halloween is a month-long celebration at our house. We decorate early, spend 31 days gorging on candy, watch every Halloween movie possible, and make some fun themed treats to enjoy. I want to share with you some of my new Halloween recipes and ideas for this year. Each is fairly customizable and will be sure to put your friends and family in a mood to celebrate. My first Halloween idea is for a Char-Spookery board. This is a traditional charcuterie board but with a spooky flair. To be called a charcuterie board, it must contain meat. Otherwise, it’s just a plain old board. What I like about charcuterie boards is how easy they are to put together and how customizable they are. We’ve been eating a lot of meatballs at our house lately!  Our idea was to take traditional dishes and turn them into meatballs.  The idea is you get the same great taste but in bite-sized morsels.  The recipes I’m going to share with you today are easy to assemble, wonderful weeknight dinner options, crowd pleasers, and make great leftovers!  The fight at our house is no longer “what’s for dinner” but “which are we going to make first” 🙂 Orange Chicken Meatballs are everything you love about a classic takeout meal!  The flavor is incredible – you will think you are eating orange chicken from your favorite Chinese restaurant but with fewer calories and fat.  I like to serve the Orange Chicken Meatballs on top of Cilantro Lime Rice.  You could serve these with rice, noodles, or as is. Ok jockeys, quit horsing around it’s time for some Kentucky Derby Themed recipes.  I’ve got the Triple Crown of recipes for you now, so bear with me! First up we’re serving Bourbon Meatballs which you’ll find have an exquisite sweet heat to them.  We started with Mom’s Meatloaf, found in our Meat Department.  Place the meatloaf in a bowl and mix together with finely chopped onion then form into 1″ balls (use a small scoop to help make uniform size).  Heat some olive oil in a skillet and brown each of the meatballs, then transfer to a baking sheet and place into your preheated oven (at 350F) until cooked through.   Next up we are going to work on our bourbon sauce.
