Instant Pot Chicken & Vegetable Pad Thai
Instant Pot Chicken & Vegetable Pad Thai is simple weeknight meal that is ready in no time! It’s packed with tender chicken, lots of veggies, noodles, and a flavorful sauce. Pad Thai sauce is a little salty, fairly nutty, and a little sweet in flavor. I think it’s similar to peanut sauce, which tastes great on just about anything 😊 This is a one-pot meal your whole family will love! The recipe can be found here. Start by doing all your prep work. Slice the chicken, zucchini, bell pepper, etc. I like to buy matchstick carrots because they are already the needed size. I also prefer to julienne (cut super thin) my zucchini but if you have a spiralizer, that also works well. Set all the ingredients aside until ready to use. Next, make the Pad Thai sauce. In a large bowl, whisk together all the sauce ingredients – brown sugar, chicken broth, rice vinegar, soy sauce, creamy peanut butter, … Continue reading

Instant Pot Chicken Pad Thai
Instant Pot Chicken Pad Thai is better than takeout! I never thought I would say that about a home cooked meal, but it really is. It’s a one-pot dish that’s packed with chicken, veggies, noodles, and pad thai sauce. It’s salty and nutty with just a hint of sweetness. So, skip the takeout and give this a try! The recipe can be found here. As mentioned previously, this is a one-pot dish, so all you need is your Instant Pot, a cutting board, knife, and spoon. Start by slicing the chicken, bell peppers, and green onions. I like to buy matchstick carrots because the work is already done for me. If you can’t find matchstick carrots at the grocery store, you can slice your own. You want them to be very thin…. julienne style. Then, mince the garlic and chop the cilantro. Set the prepared ingredients aside. Add olive oil to the bottom of the Instant Pot. Add the … Continue reading

Wingin’ It
I’ve been on a chicken wing kick lately. There’s just something about them that I can’t get enough of. Sure, they are messy to eat, but picking every juicy morsel off the bone is pretty satisfying 🙂 There are a lot of words I would use to describe chicken wings…oven baked, grilled, crispy, sticky, sweet, spicy, saucy, tender, juicy, etc.…but it all depends on the recipe. There is also the debate of boneless vs. bone-in chicken. Is it really a chicken wing if it’s boneless? I used to only eat boneless wings because I didn’t want to do the work but now, I usually prefer bone-in wings because they a bit more succulent. I think a lot of people would agree. I started experimenting with different sauce flavors and came up with some fun Asian inspired recipes that I want to share with you today: General Tso’s Chicken Wings Kung … Continue reading
