Chicken Egg Roll in a Bowl combines the delicious flavors of your favorite Chinese restaurant appetizer in a one pan!  It’s a delicious spin on a classic egg roll.  This dish is quick to make, healthy to eat, and will change the way you eat egg rolls 🙂

The recipe can be found here.

Start by heating a large skillet over medium heat.  Add the ground chicken and heat until completely cooked.  You can also substitute ground turkey or ground pork, if preferred.

Next, add the garlic powder, fresh ginger, green onion, and soy sauce to the skillet.  Stir to combine and heat slightly.

Next, add the coleslaw to the pan and stir to combine.  Make sure to heat the coleslaw through.

That’s it!  Serve warm with additional soy sauce to taste.

The recipe can be found here.

It’s completely optional, but I like to cut wonton wrappers into thin strips and fry them in a skillet over medium-high heat to create a crunchy topping to add to the dish.  They are super quick to make and add a little texture to each bite.  And you won’t miss the crispy outside shell you normally get with an egg roll if you add wonton strips.

To make the crispy wonton strips, heat oil in a skillet over medium-high heat.  You want enough oil in the skillet to allow the wonton strips to float.  Once the oil is hot, add the strips to the oil and fry for about 10-15 seconds, making sure to turn at least once.  Remove the wonton strips with a slotted spoon and place on a paper towel to drain.

I also like to serve a side of Cream Cheese Wontons on the side.  The recipe can be found here.  Just leave off the candy eyes 🙂

Another great side dish is Cilantro Lime Rice.

The recipe can be found here.

Happy Cooking!
