Buffalo Chicken Quesadillas are another way to enjoy a popular dish.  If I can find a way to eat buffalo chicken or find a way to make it into a new dish…. it’s going to happen.  And these quesadillas don’t disappoint!  They come together quickly, only take a few ingredients, and can be doubled or tripled if you need to feed a crowd.

Start by shredding or cubing the chicken.  I like to use rotisserie chicken because it’s tender and flavorful (and precooked), but you can easily bake your own chicken if you prefer.  Add the chicken to a mixing bowl and pour in the buffalo wing sauce.  Toss to coat.  You should also sample some, for quality assurance 😊

Heat a large skillet over medium heat.  Add one tortilla.

Top with ¼ cup of shredded cheddar cheese (use more or less to your taste).

Completely optional, but you can also add a small handful of blue cheese crumbles.  I’m not the biggest blue cheese fan but I know a lot of other people that love blue cheese with buffalo chicken, so add what you like!

Top with ¼ of the buffalo chicken.

You can add a little sprinkle of shredded cheese on top of the chicken if you want.  This will help the tortilla stick but isn’t necessary.

Place the other tortilla on top and press down slightly.

Let cook for about 5 minutes then check to see if the tortilla is turning golden brown and the cheese is starting to melt.  Use a large spatula to flip over and cook on the other side for an additional 5 minutes.  You want the cheese to be melted and the chicken to be warmed through.  Cook these low and slow because you don’t want the tortillas to burn!

Remove the quesadilla from the pan and repeat the above steps until all quesadillas have been made.  This recipe makes 4 quesadillas, but you can double, triple, or half the recipe to meet your needs.

Slice and serve warm, with ranch or blue cheese dressing on the side for dipping.  You could even slice some celery or carrots to have on the side, like when you have buffalo wings.  Enjoy!

I think this will be a new family favorite.  If you have buffalo chicken lovers in your house, they will devour this recipe.  And it’s simple enough that kids can assemble and cook these themselves when they are looking for an afternoon snack.  Give them a try!
