Homemade tomato soup is quite possibly one of the best comfort foods you can have. It’s rich and creamy, smooth in texture, and keeps you warm on a crisp fall day or cold winter night. I want to share a recipe with a slight twist on traditional tomato soup because it includes 3 cheese tortellini. This is a one pot meal that won’t disappoint.

Start by gathering all your ingredients and measuring out quantities. I think this really helps assemble the soup because ingredients are ready to pour in when the necessary step is reached.
Heat oil in the bottom of a large pot. Add the garlic and sauté until the garlic turns a golden-brown color.
Next add the tomato soup, sun dried tomatoes, milk, half and half, chicken stock, and spices. Stir to combine and bring to a simmer.
Once simmering, add the tortellini. This is what makes this a one pot meal. You don’t have to cook the tortellini in a separate pot and combine with the soup later. The simmering soup will heat the tortellini. Allow the tortellini to cook for about 8 minutes, or according to the back of the package.
Once cooked, ladle into soup bowls and top with parmesan cheese.
I made grilled cheese sandwiches as a side dish. Once grilled to perfection I cut into strips, so they could be dipped in the soup. Super simple and one of the best combinations to eat together!
You can substitute any kind of tortellini – plain, spinach, multi-colored, you name it! You can also skip the tortellini all together and simply have a bowl of soup. Don’t want grilled cheese? Serve with a sliced baguette for dipping or side salad. Make a meal that you want to enjoy and be creative!
