Hot Dog Grilled Cheese is a wonderful combination of 2 classics – hot dogs and grilled cheese!  Is it an elevated grilled cheese or is it an elevated hot dog?  You tell me!  They are super cheesy, have a crispy toasted bun, and can be made with any type of hotdog (beef, pork, turkey, etc.) …what’s not to love?  I devoured 2 of these on my own and was still thinking about them the next day 😊 So, if you have picky eaters or have an argument about what’s for dinner every night, I highly recommend you give these Hot Dog Grilled Cheese sandwiches a try.  They are sure to please everyone! Pizza Grilled Cheese combines 2 of my favorite things…pizza and grilled cheese.  It’s the ultimate mash-up meal!  And it’s something the kids will absolutely love!  Think mounds of melted cheese and spicy pepperoni sandwiched between 2 slices of buttery, garlicky bread.  Dip it in your favorite marinara sauce before each bite and you will be in heaven. The sandwiches are somewhat customizable too.  Use turkey pepperoni vs traditional pork/beef pepperoni, add crumbled sausage, etc.…you get the picture, so each family member can easily create their own yummy sandwich. Start by adding 3 Tbsp unsalted butter to a microwave safe bowl.  Microwave for 30 seconds or until melted.  Add the parsley, Italian seasoning, garlic powder, and salt.  Stir to combine and set aside.  If you prefer to use salted butter, simply skip adding any additional salt. If you’re a jalapeno popper fan, I have a wonderful recipe for you!  It’s a Jalapeno Popper Grilled Cheese sandwich…and it’s incredible!  The bread is toasted to perfection, the jalapenos add the right amount of heat, the bacon is crisp and adds a hint of salt, and the combination of cheeses oozing out of the sandwich in each bite make it just perfect. Start by cooking the bacon according to package instructions.  Place on a paper towel lined place to absorb some of the grease and set aside.  Pro tip – if you make extra bacon, you have something to snack on while assembling the sandwiches 😊 Next, preheat the oven to 375 degrees F and line a baking sheet with parchment paper. We are in the midst of apple season in MN has some of the best orchards around!  Prime apple picking is mid-to-late August through late October and makes for a wonderful family tradition!  Our family went to a local apple orchard recently and it was a blast.  We enjoyed some delicious apple treats, took a nice walk through the orchards, picked out a pumpkin to bring home, and just had an all-around good day. Most people have a favorite kind of apple but with so many varieties to choose from, I think it’s hard to pick.  And different kinds work for different recipes, so you have the option to sample different flavors while you cook and try out new recipes. Have you ever tried Vegan cheese?  It’s actually quite yummy!  I was hesitant at first….is it expensive?  Is it going to taste good?  What if I hate it?  Does it melt? And so many more questions crossed my mind, but I went for it and really enjoyed it. My go-to brand of choice is Vegan Chao Slices.  You can find the Creamy Original and Tomato Cayenne flavors at your local Festival Foods.  Both are sold in a 7oz package and the cheese is pre-sliced.  It’s delicious on its own if you want to enjoy a slice right out of the package but also tastes lovely in the few dishes I’m about to share with you. In the midst of COVID-19 and the stay-at-home order, meals can be a little harder to plan.  Grocery stores are working hard to keep the shelves stocked but that doesn’t mean you will find every item on your list.  I think that creates a great opportunity to clean out the pantry and make some meal using existing items on home.  Maybe you have a lot of canned goods or items that are nearing expiration…use them! I created 5 different pantry meals last week that I’m going to share with you today.  I didn’t use a recipe for any of them.  They all resulted from items found in our pantry, fridge, or freezer.  It was a great way to use the food, especially from the fridge, before it spoiled and a fun way to create some new meals.  I highly suggest doing this at home.  Who knows, you might create something … Continue reading

Homemade tomato soup is quite possibly one of the best comfort foods you can have.  It’s rich and creamy, smooth in texture, and keeps you warm on a crisp fall day or cold winter night.  I want to share a recipe with a slight twist on traditional tomato soup because it includes 3 cheese tortellini.  This is a one pot meal that won’t disappoint. The recipe can be found here, and this is how you make it: Start by gathering all your ingredients and measuring out quantities.  I think this really helps assemble the soup because ingredients are ready to pour in when the necessary step is reached. Heat oil in the bottom of a large pot.  Add the garlic and sauté until the garlic turns a golden-brown color. One of my favorite seasonings is Everything Spice. It’s a combination of toasty, salty, and savory that makes every bite that much more delicious. And it goes on, well, everything! We like to make soft pretzel bites to have as an appetizer at holidays, a family get-together, game night, etc. They are a crowd favorite and usually don’t last long…but that’s probably because we tend to pair them with alcohol (who’s keeping track?) 🙂 This time we were feeling adventurous and wanted something a little different from traditional soft pretzel bites so we made Buffalo Cheddar Soft Pretzel Twists with, you guessed it, EVERYTHING SPICE!!!   We wanted a simple meal for our Friday night dinner that we knew would run late with everyone traveling to the cabin after work and decided that we would do a grilled cheese sandwich celebrating the flavors of summer. The luscious Minnesota grown tomatoes caught our eye and we settled on Caprese Grilled Cheese Sandwiches on sourdough bread. Rather than toasting the bread slices we buttered the outside of the sandwich and placed on a griddle to make them golden brown and layered sliced fresh tomatoes, fresh basil leaves and thick slices of a Mozzarella ball sprinkled with some Kosher salt. We were feeding a crowd so to speed things up we placed the assemble sandwiches on a baking sheet and covered with heavy foil and placed in the oven at 350 degrees to melt the cheese.
