Instant Pot Buffalo Chicken Mac & Cheese is a great one-pot meal that will blow your mind!  It’s a twist on traditional mac & cheese that is easy to make and done in minutes.  It’s super cream, full of tender chicken, and has a great spicy and tangy flavor from the addition of buffalo sauce.

The recipe can be found here.

Start by slicing the chicken into bite sized pieces.  Add the chicken to a bowl and season with salt, pepper, and garlic powder.  Toss to coat all pieces.

Turn on the sauté function of the Instant Pot.  Add a small amount of oil.  I like to use avocado oil or coconut oil, but olive oil works just as well.  Add the chicken and cook until cooked through, about 5-7 minutes.  Make sure to stir the chicken while it cooks so it doesn’t stick to the bowl of the Instant Pot.

Turn off the sauté function, remove the chicken, and set it aside.

Add the uncooked pasta and the broth to the Instant Pot.  Make sure the broth is covering the noodles.  Add the chicken on top, but you don’t need to stir to combine everything.

Close the lid and make sure the valve is in the sealed position.  Cook on high pressure for 2 minutes.  Quick release the pressure until the pin drops.

Remove the lid and add the shredded cheese.  Stir until the cheese has melted.  The noodles and chicken should be quite hot, so melting the cheese won’t take long!  You can add additional cheese if you want an even creamier and cheesier dish.

Add the hot sauce and yogurt and stir to combine.  Add additional hot sauce for a spicier dish!  I think it’s plenty spicy with ½ cup of hot sauce, but a little more heat is perfectly fine if that’s what you like!

Serve immediately, while the mac & cheese warm.  Add crumbled blue cheese on top to cut some of the heat or if you like the flavor.  You could also add chopped chives for a little color.  Enjoy!

The recipe can be found here.

This is a very simple recipe that is ready in under 20 minutes, including time to prep and cook.  I highly recommend it for a quick weeknight meal or anytime you have a buffalo chicken and/or pasta craving 🙂  You won’t be disappointed!

Happy Cooking!
