One of our favorite side dishes or appetizers to make over the summer is Jalapeno Poppers. The filling so simple to make yet incredibly rich and flavorful so we thought why not try to use the filling in other recipes! The result was Jalapeno Popper Stuffed Chicken.
Let me tell you, it’s yummy! You get tender, juicy chicken with spicy jalapeno and creamy cheese in every bite. And it’s not that hard to make. Let’s walk through the recipe.

Preheat the oven to 400 degrees F. Spray an 8×8 baking pan with cooking spray.
Butterfly each chicken breast by slicing it in half lengthwise, about ¾ of the way through. You want the chicken breast to fold open, not be separate into 2 pieces, so don’t slice the whole way through.
In a small bowl, mix together the cream cheese, cheddar cheese, and diced jalapeno. Make sure the cream cheese is room temp so it’s easier to mix. You could also add crumbled bacon to the mixture, but this is completely optional.
Add the jalapeno mixture to the center of each chicken breast. Close the chicken breast and use toothpicks to hold it together around the edges. Place the chicken in the prepared baking dish.
Sprinkle salt, pepper, and paprika over the top of each chicken breast, then drizzle with a little olive oil.
Bake, uncovered, for 35-40 minutes or until the internal temperature of the chicken is 165 degrees F. The jalapeno mixture should also we warmed through and starting to melt.
Remove from the oven and transfer to serving plates. Carefully remove the toothpicks and serve warm with a side of cooked or steamed vegetables. Yum!

You can easily double the recipe. You’ll just have to use a large baking dish and adjust the cook time, if needed.
