Instant Pot Bacon Gouda Mac & Cheese is a very simple yet delicious meal that is ready in no time!  The combination of ingredients is incredibly rich and flavorful.  The bacon is crispy, the onions are caramelized, the noodles are nice and tender (but not mushy), and the gouda adds a wonderful nutty and creamy taste and texture to the whole dish.  You cannot go wrong with this recipe!

Start by prepping your ingredients – chop the bacon, dice the onion, measure out your spices, and shred the cheddar and gouda.  Set all ingredients aside.

Turn the Instant Pot to the sauté setting.  Once hot, add the bacon and cook until crispy.  Use a slotted spoon to remove the bacon to a paper towel lined plate.  Set the bacon aside but no not discard the bacon grease in the Instant Pot.

Add the butter to the Instant Pot (with the bacon grease).  The Instant Pot should already be on the sauté setting.  If you turned it off, simply turn it back on to sauté.  Once the butter is melted, add the onions and sauté until translucent.  I like to leave my onions in for a few minutes past the translucent stage, so they start to caramelize a bit, but this is optional.

Add the water and use a rubber spatula to scrape up any bits that are stuck to the bottom.  If you do not do this, the Instant Pot might give you an “error message” on the display when trying to pressurize because it thinks there is something burned to the bottom.

Add the noodles (uncooked) and salt and stir to combine.

Close the lid and make sure the valve is in the sealed position.  Pressure cook on HIGH for 3 minutes.  The Instant Pot will take about 10 minutes to preheat.  Once done cooking, quick release the pressure and wait for the pin to drop.  Then remove the lid.  Be careful to not burn yourself on the steam!

Turn the Instant Pot to a low/warm setting.  Add the spices – ground mustard, onion powder, paprika, and black pepper.  Stir to combine and fluff up the noodles.

Add the heavy cream and softened cream cheese.  Stir until the cream cheese has melted.

Add the shredded cheddar and gouda cheese, about 1 cup at a time, and stir until well combined and melted.

Add the bacon and stir to combine.

You are now ready to serve!  Scoop into bowls, top with additional bacon, chopped chives, and/or toasted breadcrumbs.  Enjoy!

This is one of my go-to recipes when we want mac and cheese because it’s so easy to make.  Plus it makes enough for us to enjoy as leftovers the next day 😊 If you don’t have an Instant Pot (aka pressure cooker) I highly recommend purchasing one.  You can make some really fun meals with an Instant Pot and often they require less clean up because the entire meal is cooked in one pan.
