My new favorite obsession (aka quick and easy weeknight meal) is Naan Flatbread.  You can create so many different variations by swapping out toppings and utilizing premade / store-bought naan flatbread.  My most recent creation is Walnut, Pear & Gouda Naan Flatbread.  It’s perfect for pizza night, to serve as an appetizer, or to serve alongside a salad or pasta dish.  Think fresh, juicy pears on top of warm, chewy flatbread with spicy arugula, walnuts, and a savory balsamic glaze.  It’s yummy! The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Place both flatbreads on the baking sheet and drizzle with 1 Tbsp olive oil (drizzle on both). As colder weather sets in you are probably looking for something warm and filling to satisfy your cravings.  It is apple season (so move over pumpkin spice) and I think apple is one of the best flavors of the season because it pairs well with many dishes.  There are so many varieties of apples you are sure to find one that is your favorite and tastes great on a salad, or in a sandwich, or perhaps baked into a dessert. Instant Pot Bacon Gouda Mac & Cheese is a very simple yet delicious meal that is ready in no time!  The combination of ingredients is incredibly rich and flavorful.  The bacon is crispy, the onions are caramelized, the noodles are nice and tender (but not mushy), and the gouda adds a wonderful nutty and creamy taste and texture to the whole dish.  You cannot go wrong with this recipe! The recipe can be found here. Start by prepping your ingredients – chop the bacon, dice the onion, measure out your spices, and shred the cheddar and gouda.  Set all ingredients aside. We are in the midst of apple season in MN has some of the best orchards around!  Prime apple picking is mid-to-late August through late October and makes for a wonderful family tradition!  Our family went to a local apple orchard recently and it was a blast.  We enjoyed some delicious apple treats, took a nice walk through the orchards, picked out a pumpkin to bring home, and just had an all-around good day. Most people have a favorite kind of apple but with so many varieties to choose from, I think it’s hard to pick.  And different kinds work for different recipes, so you have the option to sample different flavors while you cook and try out new recipes. Nothing beats melty for a quick solution to dinner during these hectic weeks at the beginning of the school year. We decided to experiment with Gouda cheese for easy yet very tasty melty sandwiches. If you’re going to have a great sandwich you must use great bread, we chose a wonderful Boule made by Taste of Scandinavia for our sandwich bread. Simply toasting the bread didn’t seem like a good idea for a perfect melty sandwich so we settled on spreading the outside of the bread slices with Hellman’s Mayonnaise and cooked until a beautiful golden brown in a large non-stick frying pan or griddle. Our first melty sandwich effort was using Smoked Gouda on our golden crusted bread.
