One thing I always hear people talk about is Easter Brunch. Who is hosting? What are we having? So on and so forth. But what I never hear anyone talk about is Easter Cocktails. Why not add adult beverages to the celebration? Well, I did just that! I use Peeps for a festive touch and each cocktail is themed to a different Peep color.
Here’s what I have for you today:
The Blue Peeps Cocktail is very citrusy and a little sweet. It reminds me of a cocktail I would drink on a tropical beach somewhere 😊
The Pink Peeps Cocktail tastes just like a vodka lemonade. Perfect on a hot summer day!
The Yellow Peeps Lemon Cocktail is like a lemon drop. It’s a little sour with a sweet aftertaste.
Two of the recipes call for marshmallow vodka, which I couldn’t locate, so I did have to make my own (oh darn). It’s easier than it sounds! I took some mini marshmallows and cut into small pieces (you could do the same with regular sized marshmallows. I packed them into a mason jar, filled the jar with vodka, secured the lid, and let it sit for 24 hours. I did give the jar a little shake every so often to loosen the marshmallows up, but it’s OK if you forget to do this. The main takeaway is the longer you can let the jar sit, the more vibrant the flavor will be. Once the jar has sat for 24 hours, strain the mixture to remove any remaining marshmallow chunks. You are now ready to use your marshmallow infused vodka!
Let’s walk through how to make each cocktail! Each recipe makes 2 cocktails.
Start by dipping the rim of 2 lowball glasses into simple syrup to coat the rim. Then, dip the rim into the sugar to coat the rim.
Fill each glass with ice.
Add 2 oz of the marshmallow infused vodka to a shaker along with the blue curacao, lemon juice, and sprite. Briefly shake to combine the ingredients then pour evenly between the 2 glasses.
Garnish each glass with a blue Peep. Enjoy!
This recipe makes 2 cocktails.
Start by adding 4 pink peeps to a mason jar. Top with 1 cup of vodka. Secure the lid and let sit on the counter overnight to infuse. Once the jar has sat overnight, strain the mixture to remove any remaining marshmallow chunks.
Pour the Peeps infused vodka evenly between 2 glasses. Top with pink lemonade.
Garnish each glass with a pink Peep. Enjoy!

We sure had fun creating and sampling each cocktail. It’s so hard to choose which one is my favorite but if I had to rank them, I’d say blue, yellow, pink, in order of most favorite to least favorite. What do you think will be your favorite?
