Mediterranean Turkey Bowls with Lemon Rice are my new favorite “bowls” to eat and quite honestly, I don’t think I’ll ever make regular rice again – lemon rice is where it’s at!  These bowls are FULL of flavor.  You have a tomato salad that is incredibly fresh, a Tzatziki sauce that is creamy and tangy, ground turkey that is perfectly seasoned and tender, and fluffy rice that is infused with a wonderful citrus flavor.

I know this recipe looks really long and complicated but it’s actually quite easy!  We’re going to break it down into 4 categories:

  1. Tzatziki Sauce
  2. Tomato Salad
  3. Lemon Rice
  4. Mediterranean Turkey

 

Our first step is to prepare the Tzatziki Sauce.  In a medium bowl, combine the Greek yogurt, lemon juice, olive oil, dill, garlic, and cucumber.  Stir to combine then taste and season with salt and pepper as needed.  Cover and refrigerate until ready to use.

Our second step is to prepare the Tomato Salad.  In a medium bowl, combine the tomatoes, onion, parsley, olive oil, red wine vinegar, and garlic.  Stir to combine then taste and season with salt and pepper as needed.  Cover and refrigerate until ready to use.

Our third step is to prepare the Lemon Rice.  Pour the broth into a large saucepan.  Add the rice and bring to a boil.  Once boiling, cover and reduce the heat to low.  Simmer for 10-15 minutes or until the broth is absorbed and the rice is fluffy.

Remove from the heat and add the butter, lemon juice, and lemon zest.  Stir to combine.

Add the parsley and stir to combine.  Cover and set aside until ready to use.

Our fourth step is to prepare the Mediterranean Turkey.  You can start this process while the rice is cooking.  Heat oil in a large skillet over medium heat.  Add the ground turkey (or use ground chicken if you prefer) and onion.  Cook until the turkey is cooked through, breaking apart as it cooks, and the onion is soft and translucent.

Add the garlic, oregano, and basil.  Stir to combine.

Add the sun-dried tomatoes and stir to combine.  Continue to cook for 3-4 minutes then remove from the heat.

You are now ready to assemble the bowls.  Add a heaping scoop of rice to the bottom of a bowl.  Top with the Mediterranean turkey and tomato salad.  Add any additional toppings such as chopped cucumber or sliced olives.  Then, add a dollop of the Tzatziki sauce.  Enjoy!

I love mixing everything in the bowl together into this Mediterranean mashup because you get a little bit of everything in each bite!  It’s light, refreshing, and will leave you completely satisfied!  Naan or pita bread are great to have on the side.  Either to eat as is or scoop into the bowl!

We usually make these bowls for dinner, but they will also work as lunches for the week if you like to meal prep.  Depending on how many servings you need, this recipe serves 4-6 for dinner.
