We made Taco Rice with Queso earlier this week and it’s probably one of my favorite new recipes we’ve tried lately! It’s a one-pan recipe with meat, taco seasoning, and rice that is coated in warm, melted queso. Talk about delicious! The rice is perfectly seasoned and tender, and pairs well with the meat, but my favorite part is the queso. You drizzle some over the top of the dish before serving and then add more and more and more until you have the appropriate amount (aka a lot) of queso on your plate.
Don’t mistake this recipe for a burrito bowl. You don’t add lettuce, tomatoes, shredded cheese, salsa, etc. on top (but you sure can!). You simply enjoy a bowl of taco meat, rice, and queso. And it’s amazing.

I did use plant-based meat for this recipe. You can use ground beef, ground turkey, ground chicken, ground pork – whatever meat you so choose! I had a lot of plant-based meat on hand, so I thought why not? You honestly can’t taste the difference one you add any seasonings and mix in the rice. But if you are skeptical, use meat.
Start by adding the meat and chopped onion to a large skillet and season with salt and pepper. Cook on medium heat until the onions are soft and translucent, and the meat is cooked through. Crumble the meat as it cooks but do not drain any grease (it adds flavor to the dish). Make sure you are using a skillet with a lid as you will need to cover and simmer in a later step.
Add the taco seasoning, garlic powder, ½ tsp salt, and ½ tsp pepper to the skillet and stir to combine.
Add the rice and stir to combine.
Add the broth and tomato sauce and stir to combine.
Increase the heat to high and bring the mixture to a boil. Once boiling, cover, and reduce the heat to low. Simmer for 15-20 minutes or until the rice is tender. Remove from the heat and stir to fluff the rice.

Scoop the rice into bowl for serving. Drizzle with the melted queso and serve immediately. Add as much extra queso as your heart desires. Enjoy!
