Easy Taco Skillet is perfect for Taco Tuesday or any time you are looking for some Tex-Mex flavors.  It’s very easy to make, is packed full of flavor, and is a versatile recipe.  When I asked Andrew what his thoughts were, he said “it’s good”.  What he means is it’s cheesy, the beef is spicy, the veggies are fresh, and it has some heat to it but it’s not overpowering.  I would say it’s like taco soup in taste (if you are familiar) but is much heartier. We made Taco Rice with Queso earlier this week and it’s probably one of my favorite new recipes we’ve tried lately!  It’s a one-pan recipe with meat, taco seasoning, and rice that is coated in warm, melted queso.  Talk about delicious!  The rice is perfectly seasoned and tender, and pairs well with the meat, but my favorite part is the queso.  You drizzle some over the top of the dish before serving and then add more and more and more until you have the appropriate amount (aka a lot) of queso on your plate. Don’t mistake this recipe for a burrito bowl.  You don’t add lettuce, tomatoes, shredded cheese, salsa, etc. on top (but you sure can!).  You simply enjoy a bowl of taco meat, rice, and queso.  And it’s amazing. Summer is fast approaching and one thing I look forward to eating more of is salads.  There is something about a big bowl of leafy greens with all the fixings that screams summer.  It’s a healthy meal and is light and refreshing on a hot day.  You also don’t often feel like you overate with a salad, and you can customize the ingredients to match your tastes. Pizza is always on my mind.  I could eat it for every meal of the day, and sometime do.  I have no shame (wink).  I also love tacos but eat them far less frequently.  One night we were deciding what to have for dinner and couldn’t decide between the two, and quite honestly, I can’t blame us.  Both are simple to make, offer a variety of flavor options, and can come together in no time.  Our compromise was to make a Taco Pizza and have the best of both worlds.  The end result was quite tasty!  I mean, as Homer Simpson always says, “Mmmmm…. Tex-Mex Chicken & Zucchini Skillet is a yummy, low-carb, one-pan dinner that’s ready in about 30 minutes, which makes it a great option for a quick weeknight meal.  It’s packed with a variety of vegetables, tender chicken, and lots of flavor! This is how you make it: start by doing all your prep work.  Chop the onion, bell peppers, zucchini, green onion, and cilantro.  Mince the garlic.  Drain and rinse the black beans.  Slice the chicken breasts.  Set everything aside.  This will help you move along a lot faster while cooking because all ingredients are ready to go.  You can even portion out your seasonings ahead of time! Potato Tacos with Jalapeno Cilantro Sauce are a delight!  They are vegetarian as well as vegan, so they make the perfect meal for Meatless Monday (or any day of the week).  Plus, they are delicious!  And who doesn’t love tacos? The Jalapeno Cilantro Sauce is a wonderful condiment for these tacos.  It add a citrusy, tangy, flavor to the tacos.  You’ll have plenty of leftover sauce as well to enjoy later in the week on more tacos, rice, chicken, salad, etc. The recipe can be found here. Start by making the Jalapeno Cilantro Sauce.  Add all ingredients to a food processor or blender and blend on high until smooth; jalapeno, cilantro, garlic cloves, lime juice, apple cider vinegar, avocado oil, vegan mayo, and salt. Just when you thought breakfast couldn’t get any better, along comes Pancake Breakfast Tacos! All your favorite breakfast foods are combined in a pancake shell to create these breakfast tacos; piled high with scrambled eggs, bacon, sausage, etc.  Super yummy and easy to make, so start your morning right with Pancake Breakfast Tacos! Start by making the pancake mixture according to package instructions.  Heat a flat-bottomed skillet or griddle.  Once hot, add the pancake batter and cook the pancakes according to package instructions.  I made 6 large pancakes but make however many batches necessary to feed your family or guests. Is anyone else questioning why they live in MN with the weather we are having this week?  If you are looking for a quick 30-minute meal, that is also warm and hearty, to get you through the cold weather I have the perfect solution.  It’s Chicken Taco Soup. The soup is loaded with chicken, beans, corn, and tomatoes, and is packed full of flavor.  Most of the item you probably already have in your pantry, so it’s easy to whip together during the week.  It’s the perfect hot meal on a cold winter night!
