I recently had a yummy salad at a brewery we stopped at while traveling out of state and I couldn’t stop thinking about it!  I knew I had to try to recreate it when we got home, and the result is…drumroll please… Arugula Salad with Burrata & Prosciutto.

This salad is packed with flavor and is incredibly light and fresh!  The arugula is the base of the salad and has a slightly peppery taste.  The burrata cheese adds a lovely creamy flavor in each bit and pairs well with the salty prosciutto.  I had some extra chopped walnuts lying around from a previous recipe and thought, why not toss those in for a little crunch?  The dressing is a wonderful mixture of tangy balsamic glaze (drizzled over the top) and sweet honey and fig jam (spread on the bottom of the bowl).  You will love this salad and want to make it again and again!

Start by dividing the fig jam / spread evenly between 2 bowls or plates.  Spread it across the bottom.  Then, drizzle honey over the top.

Divide the arugula between each bowl (or use spinach, romaine, or any leafy green you prefer).

Top each with a ball of burrata and evenly divide the prosciutto.

Sprinkle on some walnuts (or pecans, pine nuts, any nut of your choice) and drizzle with a balsamic glaze.

Yum!  I plan on making this salad again soon because it’s that’s good!  And the burrata is sold in a pack of 4 so that means we get to enjoy this meal twice in one week, lucky us 😊 As you read from my comments above, you can customize the salad.  Don’t like arugula?  Use spinach.  Don’t care for walnuts?  Use pine nuts.  If you don’t like a balsamic glaze or don’t have any on hand, use olive oil or a vinaigrette.  Make the salad your own.
