Baking with blocks of feta cheese recently became all the rage on TikTok.  I admittedly tried the Baked Feta Pasta recipe from a TikTok post, and it was phenomenal!  This blog, however, isn’t about pasta.  It’s about mashed potatoes.  Baked Feta Mashed Potatoes to be specific.  They are just as easy and effortless to make as the baked pasta and have a wonderfully creamy texture with a hint of tang from the feta cheese.  It’s the perfect recipe for a weeknight side dish (with leftovers to spare), to serve at a holiday dinner, or perhaps bring to a potluck.  It’s a foolproof recipe I’m sure you’ll love!

Start by preheating the oven to 400 degrees F and spray a 9×13 baking dish with cooking spray.  Next, wash, peel, and chop the potatoes, chop the chives, and slice the butter.

Add the potatoes to the baking dish and pour the half & half over the top.  The potatoes won’t be entirely covered with liquid but that’s OK.  Place the feta in the center on the baking dish, on top of the potatoes.  Season with salt and pepper.

As you can see from the picture, I used crumbled feta.  You can use a block of feta or crumbled feta.  I had a hard time finding blocks of feta in stock at my local grocery store, so I opted for the crumbled version.  Both will work just fine in the recipe.

Cover the baking dish with aluminum foil and bake for 1 hour to 1 hour and 20 minutes.  The half & half should be simmering, and the potatoes should be cooked through (you can easily pierce the potatoes with a fork).  Mine took about 1 hour but I know oven temps can vary.

Remove the baking dish from the oven and use a potato masher to mash the potatoes until smooth and fluffy.  It’s OK if small chunks remain – make the potatoes as chunky or smooth as you prefer.  Add the sour cream and stir to combine.  Season with salt and pepper and stir to combine.

Cover the baking dish with aluminum foil again and bake for an additional 10 minutes.  Remove from the oven and garnish with fresh chopped chives (or use green onions).  Serve warm and enjoy!

These mashed potatoes are super rich and creamy.  I don’t think any additional toppings are required but you can add additional sour cream or perhaps some shredded cheese if preferred.  The feta melted nicely and blended will with the potatoes.  The flavor was perfect.  I’ll be making these again.
