If you aren’t familiar with Frito Pie, it’s a popular dish in the Midwest and southern states and consists of chili, cheese, and corn chip (aka Fritos).  However, it’s not actually pie but rather a pile of Fritos with chili and other toppings on top.  It’s sometimes served directly from the bag of Fritos (think walking tacos) where the chili and toppings are added to the bag.  Alternatively, you can pour the Fritos in a bowl or on a plate and add your chili and toppings.  It’s comfort food at its finest and is packed with Tex-Mex flavors.  I’ve made both a chicken and beef version and want to share the recipes with you today.

Both recipes are made the exact same way, but you choose if you want to use ground beef or ground chicken.  Let’s walk through how to make it:

Start by preparing your ingredients – chop the onion, mince the garlic, drain, and rinse the beans.

Next, make the chili.  Heat oil in a large pot or deep skillet over medium heat.  Add about 2/3 of the onion and cook until soft and translucent, about 5 minutes.  Add the garlic and cook until fragrant, about 30 seconds.  Add the tomato paste and stir to combine and coat the onions.

Add the ground beef or ground chicken and cook, crumbling as it cooks, until completely cooked through, about 7-8 minutes.  You can drain some of the grease if needed.  Add the chili powder, cumin, oregano, and cayenne and stir to combine. Liberally season with salt and pepper and stir to combine.  Add the entire can of crushed tomatoes, pinto beans (drained and rinsed) and entire can of green chilies.  Stir to combine and bring to a boil then reduce the heat to low and simmer for 20 minutes.

You are now ready to assemble!  If you are using individual bags of Fritos, simply cut off the top or slice down the middle, add a scoop of the meat mixture and top with toppings of your choice.  We opted to use bowls for assembly.  To do this, line the bowls (or plate bowls) with Fritos, added a heaping scoop of the meat mixture to the center, and top with the remaining onions, some shredded cheddar cheese, and sliced jalapenos.  Dig in and enjoy!

You can customize this dish with toppings galore!  I went with simple, only onions and cheese, but you can add Pico de Gallo or chopped tomatoes, sour cream, guacamole, shredded lettuce, olives, hot sauce, black beans, salsa, etc.  Any topping you would put on a taco would probably taste good 😊

Cool any leftovers and store in an airtight container in the fridge.  Simply reheat before serving.
