Start by preheating the oven to 400 degrees F and line a baking sheet with parchment paper.

Add the ground chicken, shallot, breadcrumbs, parmesan, 1/3 cup pesto, salt, and pepper to a mixing bowl.  Use a spoon or your hands (I prefer my hands) to mix until well combined.  Then, use a cookie scoop or your hands to form meatballs, about 1 ½ Tbsp in size.  For this part, I prefer to use a cookie scoop, so they are uniform in size.  Place the meatballs on a baking sheet, evenly spaced apart.  You should have enough for about 14 meatballs.

Bake the meatballs for 20-25 minutes or until cooked through and an internal temperature of 165 degrees F is reached.  The meatballs are hard and a little hard to temp.  You might need to cut one in half to ensure they are cooked through – this is the method I prefer if I can’t get a good read on my thermometer.

While the meatballs bake, bring a pot of water to a boil and cook the noodles according to package instructions.  Remove the noodles to a bowl, add the remaining pesto and toss to combine.

Spoon the noodles into bowls and top with a few meatballs.  Sprinkle grated parmesan over the top, serve and enjoy!

Any leftovers should be cooled completely and stored in an airtight container in the fridge.
