Start by preheating the oven to 350 degrees F. Next, prep all your ingredients; debone and shred the rotisserie chicken, cook and chop the bacon, dice 1 ½ of the jalapenos, slice the other ½ of the jalapeno. Set all ingredients aside.

Heat oil in a large oven-safe skillet over medium heat. Add the diced jalapenos and garlic and cook for about 1-2 minutes or until softened, then season with salt. Add the cream cheese and stir until melted. You can slice the cream cheese and add in pieces if you prefer vs adding as one large block. It’ll melt faster and be less likely to burn 🙂

Add the heavy cream and stir to combine, then add the rotisserie chicken and about 90% of the bacon and stir to combine. You want all ingredients to be nicely coated. Press the mixture down into a flat layer in the skillet.

Sprinkle the shredded cheese over the top and bake for 15 minutes or until the cheese is melted and starting to bubble. Top with the rest of the chopped bacon, sliced jalapenos, and chopped cilantro.  Serve warm and enjoy!
