This Cajun Chicken Chili brings together the best of both worlds—smoky, spicy, and creamy, with a delightful kick that will have your taste buds dancing! Let’s start by talking about the sausage portion of the recipe.  If you are using precooked sausage, slice into pieces and lightly brown on each side in a skillet over medium heat.  If the sausage is NOT pre-cooked, slice into pieces and cook until completely cooked through, according to package instructions.  You want to make sure the sausage is safe to eat, not just warmed (like with precooked sausage).  Set the sausage aside until ready to use.  I use pre-cooked sausage when I make this recipe but use what you prefer to eat and serve your friends and family.

Next, melt butter in a large pot or Dutch oven over medium heat.  Add the flour and stir to combine.  Cook this for about 2 minutes.  Gradually pour in the chicken broth and half and half, whisking as you pour, to combine with the flour mixture and get rid of any clumps.  Increase the heat to high and bring to a boil.  Let boil for about 2 minutes to thicken, then reduce the heat back to medium.

Add the dried minced onion, garlic powder, cumin, chili powder, and Cajun seasoning, and whisk to combine.  Add the kidney beans, northern beans, corn, and green chilies and stir to combine.  Add the rotisserie chicken (should already be deboned) and sausage (what you cooked earlier) and stir to combine.  Let the chili simmer for about 10-15 minutes, stirring occasionally.

Next, add the shredded pepper jack cheese and stir to melt and combine.  Continue to heat for an additional 5 minutes to make sure ALL ingredients are heated through, and everything is fully incorporated, stir occasionally.  Once you are ready, ladle into bowls and serve hot with Fritos Scoops or Tostitos Scoops on the side for dipping (this is completely optional but so worth it).  Enjoy!

Any leftovers should be cooled completely and stored in an airtight container in the fridge.
