Start by marinating the chicken. Place the chicken breasts in a large zip-top bag with the olive oil, paprika, garlic powder, onion powder, salt, and black pepper. Seal the bag and toss until the chicken is evenly coated. Refrigerate for at least 30 minutes, or for even more flavor, let it marinate overnight.

While the chicken marinates, prepare the chimichurri sauce. In a small bowl, combine the parsley, cilantro, garlic, vinegar, red pepper flakes, oregano, salt, and black pepper. While the chicken cooks, sauté the sliced onion and bell pepper in a lightly oiled skillet or on another section of the Blackstone. Cook until the vegetables are tender with a slight char around the edges. At the same time, prepare the white rice according to the package directions.

Transfer the cooked chicken to a cutting board and let it rest for 5 to 10 minutes before slicing. To assemble the bowls, divide the cooked rice among serving bowls, then top with the sliced chicken, sautéed peppers and onions, halved tomatoes, and sliced avocado. Finish each bowl with a generous drizzle of the fresh chimichurri sauce and serve immediately.
