St Patrick’s Day is fun day to celebrate, whether you are Irish or not. You can typically find a parade or two around town, Irish themed food and drinks at your favorite restaurant or bar, and plenty of people wearing green! It’s a festive day to celebrate and will unfortunately look a lot different this year due to COVID. BUT…that doesn’t mean you can’t still celebrate at home!
We are going to celebrate by having breakfast for dinner. You don’t tend to hear of too many Irish breakfast foods but we’re going to make it work! The food doesn’t have to be Irish necessarily but can be themed to fit the event. In this case, we’re going to make Shamrock Cinnamon Rolls and Shamrock Fried Eggs. So instead of being traditional Irish food, we are shaping the food and adding some green elements to fit with the typical colors of the day.
Shamrock Cinnamon Rolls are just a can of store-bought refrigerated cinnamon rolls that you heat and serve. However, we are going to shape them into shamrocks and add green sprinkles. Super easy yet delicious and fun to make.

Start by preheating the oven to 350 degrees F. Line a baking sheet with parchment paper.
Open the can of cinnamon rolls and set the icing aide. Peel apart the cinnamon rolls, then unroll each cinnamon roll into one long strip. Cut each strip into 4 equal sized pieces.
Fold 3 pieces in half, then press the middle inward to create a heart shape. Arrange the 3 pieces on the baking sheet to for a shamrock shape. Use the 4th piece to create the stem. I like to be a little decorative and roll a very small portion of the end of the stem, but this is optional.
Repeat this step until the rest of the cinnamon rolls have been shaped into shamrocks.
Bake for 8-10 minutes or until golden brown and cooked through. Remove from the oven and use a spatula to remove the cinnamon rolls to a serving platter or individual plates. If you try to remove them with your hands, they may come apart and no longer resemble shamrocks, so make sure to use a spatula.
Heat the icing in the microwave for 15-20 seconds. Drizzle over the top of each cinnamon roll. One thing I did not try was to add green food coloring to the icing, but this would be another option to make the dish more festive.
I prefer to top the icing with green sprinkles. Makes the dish simple and fun!

Shamrock Fried Eggs are essentially fried eggs that are inside of green bell pepper rings. This 1) helps to keep the egg intact, and 2) create a fun shamrock shape. We like to put peppers with eggs anyway, so this is an alternate way to add some flavor to your breakfast and spice things up a bit!

Start by removing the top and bottom of the bell pepper. Slice the bell pepper into 4 equally thick, round pieces. Remove any seeds and trim the inside edges (any of the white part), if needed.
Heat 1 Tbsp butter in a flat bottomed skillet over medium heat. You want a skillet that is large enough to hold all the eggs at once (unless you want to work in batches) and something that isn’t rounded on the bottom, otherwise the bell peppers won’t lay flat and the eggs will run all over the pan.
Place the 4 bell pepper rounds in the skillet.
Crack one egg into the center of each bell pepper ring. Season with salt and pepper.
Let the eggs cook until almost entirely set, about 3-5 minutes. You will want to watch the heat closely. If the heat is too low, the eggs will take a lot longer to cook through. If the heat is too high, you might burn the bottom of the egg before it is cooked through and time to flip. Adjust the heat as needed but I found that a medium heat or slightly below medium heat worked well.
You will see that most of the egg has turned white. Once this has happened, use a spatula to gently flip over each bell pepper. You want to flip the whole thing – both the bell pepper and egg. Allow the top of the egg to cook for about 30-60 seconds. The eggs should be completely cooked through at this point, including the yolk. If you prefer a runny yolk, adjust the cook time slightly before flipping.
Remove to a plate and serve warm. Season with additional salt and pepper, to taste. Enjoy!

I’m not typically one to turn down dessert, but I also don’t tend to serve dessert with breakfast. However, we’re having breakfast for dinner, and it’s a holiday, so dessert is a necessity. We’re going to have St Patrick’s Day Marshmallow Treats. These are a basic recipe for marshmallow treats with a few added elements. They are soft and gooey and won’t last long!

Start by opening one box of Lucky Charms cereal (the standard size box, not large or family size). Separate the marshmallows from the cereal. Set the marshmallows aside and either discard the cereal or save to enjoy later.
Melt the butter in a large pot over low heat.
Add the marshmallows and stir occasionally until fully melted. I prefer to use miniature marshmallows, but large marshmallows will also work.
Add the vanilla extract and stir to combine.
Add food coloring and stir to combine. Add as much or as little food coloring as you like to reach the desired green color. Less drops will yield a lighter color and more drops will yield a darker color.
Turn off the heat. Add the Rice Krispie cereal and stir to fully coat.
Add the Lucky Charms marshmallows and stir to combine.
Pour the mixture into a greased 9×13 pan. Lightly spritz your fingers with cooking spray and press the mixture into an even layer in the pan. The cooking spray will prevent the mixture from sticking to your fingers, making it virtually impossible to press the mixture down!
Set aside to cool and set. I like to let mine sit for at least 30 minutes but preferably a little longer, so they hold together when cut.
Once set, use a knife to slice into bars. Serve immediately or store in an airtight container on the counter. Enjoy!
