Pineapple Shrimp Skewers
We love to grill, and we love seafood, so we combined the two to create Pineapple Shrimp Skewers. These are prefect for a lighter dinner and come together so quickly! Plus, you can customize the skewers to different tastes by adding different fruits or veggies to accompany the shrimp. They are sweet yet citrusy, and very delicious! The recipe can be found here. Start by combining the coconut milk, hot sauce, soy sauce, lime juice, and orange juice in a bowl. Pour into a Ziplock bag, then add the shrimp to the bag and toss to coat. Seal the bag and place in the fridge to marinate for 1-2 hours. Make sure the shrimp is thawed and shelled before placing in the bag! While the shrimp marinates, soak wooden skewers in water. Lemon Chicken with Cilantro Lime Rice
I’ve been craving Lemon Chicken for quite some time and finally found the perfect day to make it! This recipe is a homemade version of the take-out classic that tastes just as good, if not better, then what you would get in a restaurant. Don’t let the number of ingredients or steps scare you away! A lot of the ingredients are repeated throughout the marinade, batter, and sauce recipes, and the steps don’t take that long. Plus, this is a recipe you can work on ahead of time and come back to when ready to cook. The first step is to marinate the chicken. Slice each chicken breast into thin strips (or buy boneless skinless chicken tenders if you want to skip … Continue reading

Lemon Chicken
One of our favorite meals to order at a restaurant is Lemon Chicken and we thought we were up to the challenge to make our own for Sunday dinner. On Sundays Andrew, Laura, and I tend to cook more time-consuming recipes that time doesn’t allow with busy weekday schedules, we enjoy a little wine or beer while we cook and just enjoy hanging out together. No one part of this Lemon Chicken recipe is difficult, you must marinate the chicken for 30 minutes in the frig before you begin battering process and it takes some time to fry the chicken in small batches so that it cooks perfectly. We made a big batch because we love leftovers! This also allows time for beverages and good conversation. We use an electric deep fryer to fry the chicken but you may easily use a heavy pan on the stove top, we heat … Continue reading
