Instant Pot Chicken & Vegetable Pad Thai is simple weeknight meal that is ready in no time! It’s packed with tender chicken, lots of veggies, noodles, and a flavorful sauce. Pad Thai sauce is a little salty, fairly nutty, and a little sweet in flavor. Slice the chicken, zucchini, bell pepper, etc. I like to buy matchstick carrots because they are already the needed size. Looking for a quick and easy weeknight meal that is also flavorful and delicious? Look no further! Meatless Monday has a new fan favorite…. Lentils & Vegetables in Peanut Sauce. This is a vegan / vegetarian meal that’s packed with fresh vegetables and protein. I chose some of my favorite veggies to use in this dish, but you can add any veggies you like. You can add mushrooms, squash, snap peas, you name it! The peanut sauce is what really brings it all together. It’s bursting with flavor and is rich and creamy. It’s Peanut Butter Jelly Time!
Growing up I always loved a good peanut butter and jelly sandwich. I mean, who didn’t? It was a staple in my daily life and it’s making a comeback. However, instead of sandwich form I’m pairing it with another food I love. What for it……chicken wings. Yes, peanut butter and jelly chicken wings. Have you ever had a spring roll before? If not, I’m sure you’ve noticed them on menus or seen pictures online. They are sometimes called Vietnamese spring rolls or rice paper rolls and are similar to egg rolls but are unfried. They are loaded with fresh vegetables and fruit and taste amazing! They are also vegetarian/vegan and oh so healthy. The recipe I want to share with you today is for Vegetable Spring Rolls with Peanut Sauce. These make a great lunch, dinner, or appetizer. Chicken Satay with Peanut Sauce
Chicken Satay with Peanut Sauce are perfectly grilled chicken strips that have been marinated in a flavorful sauce. They are perfectly sweet and tangy and make an easy dinner. Don’t forget to drizzle the leftover peanut sauce on top of the skewers before serving! The recipe can be found here. Start by slicing the chicken breasts into strips and set aside. Then prepare the marinade by combining the yogurt, ginger, garlic, and curry powder in a mixing bowl. Add the chicken to the marinade and toss to coat.
