Who doesn’t love peanut butter or brownie desserts?  Any hands up?  I didn’t think so 😊 But if you aren’t sure, I’m confident my recipe for Triple Layer Peanut Butter Brownies will change your mind.  Think rich chocolatey brownie, topped with a layer of rich and creamy peanut butter, followed by whipped cream and chopped peanut butter cups.  It’s heavenly!  And won’t last long! The recipe can be found here. Start by preheating the oven to 350 degrees and spray a 9×13 baking pan with cooking spray. Prepare a boxed brownie mix according to package instructions.  Use any brand or box mix of your choosing.  I’m partial to the fudge brownie mixes or anything that is going to be super rich and chewy.  Bake and let cool completely. While the brownies are cooling, prepare the peanut butter layer.  Add the cream cheese and powdered sugar to the bowl of a stand mixer.  Beat until creamy.  Add the peanut butter and beat again, until … Continue reading

Chocolate Peanut Butter Ice Cream Bars are one of my top 10 favorite desserts.  They are essentially cream sandwiches you make on a rimmed baking sheet.  A combination of chocolate and peanut butter makes up the flavors in the cookie with a hint of sea salt sprinkled on top.  The filling is basic vanilla ice cream.  However, you can use any ice cream flavor of your choosing.  Chocolate ice cream would make the perfect chocolate extreme dessert.  Salted Caramel ice cream would pair nicely with the chocolate/peanut butter cookies.  You get the idea!  Make this dessert your own. The recipe can be found here. Start by preheating the oven to 350 degrees F.  Generously spray an 18×13 rimmed baking sheet with nonstick cooking spray.  Please do not forget this step or you will have quite a hard time removing the bars! Melt 2 sticks of butter in a small saucepan over medium-low heat.  Remove from the heat and let cool slightly. … Continue reading

Do you remember those yummy ice cream pizzas you probably had as a child at Dairy Queen?  They came in multiple favors and were typically served at a party.  They were my FAVORITE!  And there was a time in my life that I believe they were discontinued, and I was admittedly bummed to never have one again.  However, I was able to find a way to recreate them as copycat versions of the original. Growing up I always loved a good peanut butter and jelly sandwich.  I mean, who didn’t?  It was a staple in my daily life and it’s making a comeback.  However, instead of sandwich form I’m pairing it with another food I love.  What for it……chicken wings.  Yes, peanut butter and jelly chicken wings.  A little louder for those in the back…PEANUT BUTTER AND JELLY CHICKEN WINGS! The recipe can be found here. These wings are A-M-A-Z-I-N-G and will satisfy any craving.  They are the perfect combination of sweet and spicy while being incredibly savory.  The chicken wings are coated in a delicious peanut sauce and the raspberry jelly dipping sauce brings it all together.  The combination of peanut butter, jelly, and chicken might sound weird, but I strongly suggest putting your hesitation aside and giving these wings a try! Start by preheating the oven to 425 degrees F and lining … Continue reading

This week is Spring Break for me but we’re not going anywhere.  Plans were made, then cancelled, and we’re finding other ways to enjoy our staycation.  I’m thankful we have a healthy household and even more thankful to have time to work on recipes! This blog is about a variety of Snack Mixes, or Trail Mix as some people call it.  I was going to make a variety of Snack Mixes to bring on our road trip but just because the trip was postponed doesn’t mean we can’t enjoy those snacks at home 🙂 Snack Mixes are great for a variety of reasons; they are easy to make, are a great on-the-go snack, can be customized to different tastes, they make a TON, and hold up quite well in a Ziploc bag.  So…they make the perfect snack for a road trip.  Since most of the country is missing spring break, … Continue reading
