It seems like the entire country has been battling freezing temperatures and horrible winter weather lately and MN has been no exception.  On a cold day (freezing, subzero, arctic, or however you want to describe the weather we’ve had recently) something warm and cozy is all I want.  Call it “winter warmer” food if you will.  A hearty and flavorful Guinness Beef Stew is what I ultimately ended up making.  Let me warn you, this recipe is not hard to make at all, but it does take a long time to make (aka it simmers for 2 hours) so you will need to plan ahead when making this stew. Balsamic & Guinness Chicken Wings are a unique yet delicious appetizer or dinner option.  They have quite the pleasant flavor…it’s a little tangy and sweet.  I think Guinness is mildly sweet with a hoppy/bitter flavor and notes of coffee, almost tastes like roasted almonds.  Balsamic is rich in flavor with a mellow tartness and some acidity, kind of herby.  But both complement each other nicely. The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper.  Line the chicken wings on the baking sheet, leaving a little space in between.  Drizzle with olive oil and sprinkle with salt and pepper. Bake for 40 minutes, flipping halfway through, or until an internal temperature of 165 degrees F is reached. St Patrick’s Day is next week, and in an effort to get everyone excited about the holiday, I want to share some of my favorite St Patty’s Day recipes.  All are easy to make, themed for the holiday, and taste amazing.  The 4 recipes I’m going to cover in this blog can be standalone meals/appetizers or could be combined into one big SPD feast!  Here are the recipes: Irish Nachos Guinness Pulled Chicken Sandwiches Lucky Charms Marshmallow Bars Drunk Leprechaun   Irish Nachos are a fun twist on traditional nachos because they are essentially the same thing, but you use potatoes in place of tortilla chips.  The potatoes are sliced thin and baked until they are crispy on the outside and tender on the inside.  They are topped with melted cheese, crumbled bacon, green onion, sour cream, etc.  It’s a crowd-pleasing appetizer or side dish that is perfect for your St Patrick’s Day party. St Patrick’s Day is fast approaching.  Do you have plans to celebrate?  I’m admittedly well past the years of bar hopping downtown to drink some mediocre green beer in an overcrowded bar…. St Patrick’s Day is a fun holiday for everyone!  You can usually find some type of celebration around town whether it be a parade, green beer at your favorite bar or specials on Irish food at restaurants.  Even if you aren’t Irish, it’s fun to participate in the festivities.
