If you are looking for a quick and easy weeknight meal, I have the perfect recipe – BLT Naan Flatbread.  It’s all the flavors of your favorite BLT sandwich but in flatbread form.  Think soft and chewy naan flatbread in lieu of toasted bread, crispy bacon, crunchy lettuce, juicy tomatoes, and melted cheese.  The mayonnaise is whisked into a lovely sauce to drizzle over the top.  And it’s all ready in about 20 minutes or less.

Start by preparing the bacon according to package instructions.  I like to bake or fry my bacon (kind of depends on the time I have and how much cleanup I want to do).  Remove the bacon to a paper towel lined plate to drain the excess grease and cool.  Once cool, chop into pieces.

Preheat the oven to 350 degrees F and lining a baking sheet with parchment paper.

Place the flatbreads on the baking sheet.

Top each flatbread with 1 cup of mozzarella cheese, spread evenly over the top.  You can substitute another flavor of cheese if you prefer.  Gouda, provolone, or white cheddar would all be delicious!

Divide the bacon and tomatoes evenly between the flatbreads.

Bake for 10-12 minutes or until the cheese is melted and the flatbreads are heated through.

While the flatbreads are baking, prepare the sauce.  In a small mixing bowl, combine the sour cream and mayonnaise.  Season with salt and pepper.  Taste and adjust the seasoning if necessary.  Add to a Ziploc bag and snip off a small part of the corner to create a piping bag.  Set aside.

Remove the flatbreads from the oven and top with shredded lettuce.

Drizzle the sauce over the top of each flatbread.  Alternately, you could combine the sauce and lettuce in a bowl (like you are adding dressing to lettuce) and top the flatbreads with that mixture.

Slice and serve immediately while still warm.  Serve additional sauce on the side for dipping.  Enjoy!

Super simple yet tasty!  If you like to add avocado to your BLT sandwiches, you could also add a few slices to the top of each flatbread.
