Elevate your next hotdog by smothering it with cheese and wrapping it in a tortilla before cooking.  Sounds good, right?  I give you the Quesadilladog!  It’s basically a Tex-Mex mashup of hotdogs, spicy nacho cheese, jalapenos, and warm tortillas.  It’s a great afterschool snack or can be served for lunch or dinner.  You can use any kind of hotdog – all beef franks, turkey franks, etc.  And any kind of nacho cheese – mild, spicy, etc.  I recommend fajita size tortillas because they work will with the length of the hotdogs.  You can also customize the dish if preferred.  Spread some refried beans on the tortilla, add some black beans before wrapping the hotdog, perhaps serve with salsa for dipping…you get the idea!  It’s a wonderful meal for picky kids or when your family can’t decide on one thing to have.  Simply combine 2 favorites (hotdogs and quesadillas) and you have a win.

The recipe can be found here.

Start by laying 4 tortillas on the counter.  You want them to be warm, so they are easy to work with and don’t crack or tear during assembly so warm them in the microwave for 15-20 seconds.  Add ¼ cup of nacho cheese to each tortilla and spread evenly to the sides.

Divide the jalapeno and green onions between each tortilla.

Sprinkle chili powder on each tortilla.  Sprinkle LIGHTLY!  You don’t want to use too much, or it will be spicy!

Add ½ cup shredded cheese to each tortilla.  I like to use Colby Jack but cheddar or a Mexican blend would also taste great.

Place one hotdog on the end of each tortilla.  Tightly roll the tortilla around the hotdog and place seam side down on the counter.  Repeat with the other 3.

Heat 1-2 Tbsp oil in a large skillet over medium heat.  Add the rolled-up tortillas, placed seam side down.  Cook for 2-3 minutes or until the bottom is golden brown and crispy.  Flip over and cook the other side for 2-3 minutes or until golden brown and crispy.

Remove from the skillet and place on a serving platter.  Add the sour cream to a Ziploc bag or piping bag and snip off a tiny part of the corner/tip.  Pipe the sour cream over the top of each tortilla.  You can skip this step for anyone that doesn’t like sour cream.

Serve immediately and enjoy!

The recipe can be found here.

Add any remaining nacho cheese on the side or perhaps salsa for dipping.  Ketchup would also be an option.  I would like to add a disclaimer that I have NOT tried this but imagine it could be quite good 😊

Happy Cooking!
