These low carb Hawaiian Pizza Chicken Tenders will be a new weeknight favorite!  They are all the flavors of a traditional Hawaiian pizza but without the crust.  Instead, the ingredients are piled on top of chicken tenders and baked to perfection.  The recipe is amazing!  The chicken is moist and tender, the Canadian bacon is lean and a little salty, the marinara sauce is fresh and herby, the pineapple adds a wonderfully sweet flavor, and the mozzarella really brings it all together.

Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper.

Season each chicken tender with salt and pepper or garlic powder.  This step is optional, but I think it’s necessary to add flavor to the chicken.  You could also use an Italian blend.

Wrap one piece of Canadian bacon around each chicken tender.  Place, seam side down, on the baking sheet.  You can also use sliced deli ham or wrap strips of bacon around the chicken if you prefer.

Spread pizza sauce over each chicken tender.  You can use as much or as little as you like.  I think 1-2 Tbsp per tender is the perfect amount.

Spread the pineapple chunks over each chicken tender.  Again, the amount is up to you, but 2 Tbsp is a nice amount to start with.

Bake for 15-20 minutes then remove the baking sheet from the oven and top each chicken tender with shredded cheese.

Return to the oven and bake for an additional 5-10 minutes or until an internal temperature of 165 degrees F is reached.

This recipe works well as a main course with a side of steamed vegetables or perhaps some pasta or garlic bread but would also work as an appetizer since the chicken tenders are pretty small.
