With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂  I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side.  Both are easy to make, flavorful, and healthy!

Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread.  The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added.  These gyros are incredibly tasty!

Start by preheating the oven.  While the oven preheats, prep the chicken.  Place the chicken in a small baking dish and drizzle with olive oil.  Use your hands to rub the olive oil over both sides of the chicken.  Then sprinkle fresh minced garlic, paprika, and oregano on the chicken.  Again, use your hands to rub the seasoning over both sides of the chicken.

Bake for 30 minutes or until the chicken is cooked through.  Then remove the chicken and slice it into thin strips.

Make the Tzatziki Sauce by combining yogurt, cucumber, garlic, dill, vinegar, and olive oil in a small bowl.  I find it easiest to peel the skin off the cucumber, then use a cheese grater to essentially shred the cucumber.  This is what you want to put into the sauce.  It will add great flavor without being too chunky.  You can store the sauce in the fridge until you are ready to assemble the gyros.

Heat a tiny amount of olive oil in a skillet over medium heat.  Add one piece of pita bread and heat for about 2 minutes, then flip and heat the other side for another 2 minutes.

To the warm pita bread, add sliced tomato, sliced onion, sliced chicken, and 1-2 Tbsp Tzatziki sauce.  Fold in half and serve immediately.  I also like to add some crumbled feta cheese to my gyro but it’s completely optional.  I love feta cheese so I couldn’t eat a Mediterranean meal without it!

Mediterranean Layered Hummus is a wonderful Greek inspired dip with a light and fresh taste.  It’s great for parties and will leave you wanting more!  Even better, you are only using store-bought ingredients, so you don’t have to prepare anything – just assemble.

Start by chopping the cucumber, roasted red pepper, kalamata olives, red onion, and parsley.  Add to a small bowl with 1 Tbsp olive oil, salt and pepper, then stir to combine.  You might want to grab a spoon and take a bite…better to sample now…just in case 🙂

I like to use a serving plate for presentation purposes, but any dinner plate will work.  Spread the hummus on the bottom of the plate.

Then add the Greek yogurt on top of the hummus.  Make sure to spread the yogurt evenly over the hummus.

Spoon the vegetable mixture evenly over the top of the yogurt/hummus.  You can add as much or as little as you like.  I like to add more than necessary so I have a taste of every ingredient in each bite!

Sprinkle with crumbled feta cheese and pine nuts.  Then drizzle with a little olive oil.

Serve with sliced pita bread, pita chips, crackers, carrots, cucumbers, etc. anything you want.
