I’ve been a big fan of “bowls” lately.  For example, instead of eating a stuffed bell pepper, I would eat the ingredients tossed together in a bowl.  Or instead of having an egg roll, the ingredients would be in a bowl….you get the picture.  My most recent bowl idea is for a Mediterranean Chicken Bowl.  It has a lemon-dill rice, wonderfully seasoned Greek chicken, a fresh cucumber and tomato salad, and yummy tzatziki sauce to bring it all together.  The flavors are rich and vibrant, and incredibly fresh.  It’s a light and healthy meal the whole family will love! Mediterranean Lemon Garlic Chicken Salad is an incredibly flavorful and filling meal for any time of year!  You want something light and refreshing on a hot summer night?  This is the perfect option.  It’s the middle of the winter and you want a meal that isn’t super hearty and heavy?  Look no further. Chicken Souvlaki is a classic Greek dish consisting of marinated grilled meat that is served with vegetables, creamy Tzatziki sauce, and pita bread.  It is a low carb, low in fat and very fresh.  So, for a very good reason, it’s a popular street food in Greece! Souvlaki means “meat on a skewer”.  Pork is the most common type of meat used but chicken, beef, and lamb are other options.  The recipe I am going to share with you today uses chicken.  It’s packed with flavor and will bring a taste of Greece to your kitchen! Greek Lemon Rice with Chickpeas is an amazing one-pot dish!  It is full of great Mediterranean flavors and is packed with so many herbs and veggies.  You’ll think you’re somewhere warm and sunny when eating this dish 🙂 The recipe can be found here. Preheat the oven to 375 degrees.  Make sure you have a large ovenproof skillet to use.  You will start by heating ingredients on the stove and will eventually move the skillet into the oven, so you want to make sure you are using something rated for oven use.  I used a large cast iron skillet, but a Dutch Oven would also work well. With the cold weather approaching, I thought it would be fun to make a Mediterranean based meal, and imagine I’m in warmer weather, perhaps sitting on a beach somewhere 🙂  I made Chicken Gyros with Tzatziki Sauce for the main course and served Mediterranean Layered Hummus on the side.  Both are easy to make, flavorful, and healthy! Chicken Gyros with Tzatziki Sauce are filled with spiced chicken, fresh veggies, and a tangy homemade sauce, and are served on warm pita bread.  The tangy homemade sauce is Tzatziki Sauce, which is a Greek yogurt-based sauce with cucumber and fresh herbs added.  These gyros are incredibly tasty!
