Mediterranean Turkey Bowls with Lemon Rice are my new favorite “bowls” to eat and quite honestly, I don’t think I’ll ever make regular rice again – lemon rice is where it’s at!  These bowls are FULL of flavor.  You have a tomato salad that is incredibly fresh, a Tzatziki sauce that is creamy and tangy, ground turkey that is perfectly seasoned and tender, and fluffy rice that is infused with a wonderful citrus flavor. Pan Seared Mediterranean Salmon is an easy meal that comes together (from prep-time to completion) in about 30 minutes – perfect for a weeknight meal!  The salmon is pan seared, which gives you a big return on texture and flavor.  The skin is crispy, and the center is tender and moist.  Once you add the accompanying ingredients you have a burst of Mediterranean flavors.  This meal doesn’t take a lot of effort to make but will taste like it came from a restaurant. Start by heating 1 Tbsp of olive oil in a large skillet over medium-high heat.  Season the salmon filet(s) with salt and place in the hot pan, flesh side down (skin side up).  Sear for 4-5 minutes. Greek Chicken Lettuce Wraps with Tzatziki Sauce are super easy to make, healthy, and refreshing.  They are packed with zesty chicken, cool cucumbers, crisp tomato and onion, and tangy tzatziki sauce.  It’s a burst of Mediterranean flavor!  For us, these are simple weeknight meal.  However, they would make great lunches because you can meal prep ahead of time and they are pretty light vs. filling. I recommend using bib lettuce, butter lettuce, or romaine hearts.  They bib and butter lettuce create these “cups” for the ingredients to sit in and the romaine lettuce wraps the ingredients together well without ripping.  If a lettuce wrap isn’t your thing, swap out the lettuce for a tortilla. Escape to the Mediterranean for a fun weeknight dinner that will feed the whole family and leave you feeling satisfied!  The recipe is for Sheet Pan Mediterranean Shrimp.  As the name suggests, the recipe is cooked entirely on a sheet pan, so you have easy assembly, easy cleanup, and you can use the sheet pan as your serving platter. You can eat the shrimp as is and enjoy the rest of the sheet pan ingredients as a salad or combine all ingredients, so you get a little of everything in each bite.  The shrimp is cooked to perfection and absorbs some of the other flavors while baking.  I think red onion can be quite potent but when it’s combined with the other Mediterranean flavors, it really mellows out but still give you a nice crunch.  The olives and feta cheese sprinkled over the top really bring it all together. Sometimes in the winter months we look for lighter dinner options to break away from the warm and hearty meals people typically eat when it’s so cold out.  It makes us feel a little healthier and is a great way to get in those veggies 😊 We recently made a Mediterranean Grilled Chicken with Greek Dill Sauce and paired it with Mediterranean Yellow Rice as a side.  It was incredible!  The chicken was tender and juicy, and the rice was light and fluffy.  But the secret to what makes this recipe so good is the seasoning – it makes the dish really savory.  The chicken is prepared with allspice, nutmeg, and cardamon, and the yellow rice is prepared with turmeric and cumin, making both dishes a little sweet.  So run (don’t walk) to your local Festival Foods to gather ingredients to make this wonderful Mediterranean style dish today! I’ve been a big fan of “bowls” lately.  For example, instead of eating a stuffed bell pepper, I would eat the ingredients tossed together in a bowl.  Or instead of having an egg roll, the ingredients would be in a bowl….you get the picture.  My most recent bowl idea is for a Mediterranean Chicken Bowl.  It has a lemon-dill rice, wonderfully seasoned Greek chicken, a fresh cucumber and tomato salad, and yummy tzatziki sauce to bring it all together.  The flavors are rich and vibrant, and incredibly fresh.  It’s a light and healthy meal the whole family will love! Chicken Souvlaki is a classic Greek dish consisting of marinated grilled meat that is served with vegetables, creamy Tzatziki sauce, and pita bread.  It is a low carb, low in fat and very fresh.  So, for a very good reason, it’s a popular street food in Greece! Greek Lemon Rice with Chickpeas is an amazing one-pot dish!  It is full of great Mediterranean flavors and is packed with so many herbs and veggies.  You’ll think you’re somewhere warm and sunny when eating this dish 🙂 The recipe can be found here. Preheat the oven to 375 degrees.  Make sure you have a large ovenproof skillet to use.  You will start by heating ingredients on the stove and will eventually move the skillet into the oven, so you want to make sure you are using something rated for oven use.  I used a large cast iron skillet, but a Dutch Oven would also work well.
