Loaded Baked Potato Skillet
Loaded Baked Potato Skillet is a bit of a copycat recipe. We had something similar at a local restaurant and knew we had to recreate it at home. It’s such a wonderful side dish or can be used as a full meal if you want to fill up on only potatoes, which is entirely what we did 😊 The skillet is quite literally loaded with tender potatoes that are topped with a cheese sauce, shredded cheese (because you can’t have enough cheese), crumbled bacon, sour cream, and chives. It’s a typical loaded potato but pre-chopped, cooked in a skillet, and large enough to share. I highly suggest you give it a try! The recipe can be found here. Start by preheating the oven to 400 degrees F. Slice the butter into thin pieces and place half in the bottom of a 9-inch cast iron skillet (reserve the other half of the butter). Add the … Continue reading

Slow Cooker Loaded Baked Potato Soup
Slow Cooker Loaded Baked Potato Soup is my new favorite soup. It’s rich, creamy, and loaded with the perfect toppings. It’s a made from scratch soup but it’s SO SIMPLE, so please keep reading. It’s hearty, can be a main entrée or served as a side dish/starter, reheats well so it can be enjoyed for lunch throughout the week, and makes a lot. When I first thought about making a baked potato soup, I thought this is just going to be like eating mashed potatoes. But it’s not! It has all the flavors of mashed potatoes but with a different consistency. It’s yummy and perfect for this time of you. The recipe can be found here. Start by washing and peeling the potatoes. I prefer to peel my potatoes but if you like to leave the skin on, that’s just fine. Then, slice into 1-2-inch pieces. Chop the onion and mince the garlic. Add the potatoes, garlic, onion, chicken broth, salt, and … Continue reading

Chao Vegan Cheese
Have you ever tried Vegan cheese? It’s actually quite yummy! I was hesitant at first….is it expensive? Is it going to taste good? What if I hate it? Does it melt? And so many more questions crossed my mind, but I went for it and really enjoyed it. My go-to brand of choice is Vegan Chao Slices. You can find the Creamy Original and Tomato Cayenne flavors at your local Festival Foods. Both are sold in a 7oz package and the cheese is pre-sliced. It’s delicious on its own if you want to enjoy a slice right out of the package but also tastes lovely in the few dishes I’m about to share with you. I admittedly started by trying each flavor on its own, so I knew what I was getting myself into. The Creamy Original tastes like provolone cheese and the Tomato Cayenne tastes like a spiced cheddar … Continue reading

Haunted Hullabaloo
Halloween is fast approaching. For some, Halloween is a lifestyle and obsession, for others, it’s a day to be someone or something else. I personally love decorating the house, buying candy to pass out to trick-or-treaters, dressing up the dog…. but mostly, I love the food! I like to take a traditional dish and “dress it up” for Halloween. For example, a pepperoni pizza might have the pepperoni in the shape of a jack-o-lantern. You get the picture 🙂 This year, I have quite the spread. It’s going to be one big Halloween celebration at our house, starting with breakfast, and ending with dinner. Here’s what’s on the menu: Eyeball Donuts Spider Web Donuts Candy “Charcuterie” Board Eyeball Asparagus and Gruyere Tart Spider Web Loaded Potatoes Festival Feetloaf Mini Skeleton Cheesecakes Halloween is full of candy and treats so why not start the day with something sugary? Eyeball … Continue reading
