Pizza Grilled Cheese combines 2 of my favorite things…pizza and grilled cheese.  It’s the ultimate mash-up meal!  And it’s something the kids will absolutely love!  Think mounds of melted cheese and spicy pepperoni sandwiched between 2 slices of buttery, garlicky bread.  Dip it in your favorite marinara sauce before each bite and you will be in heaven.

The sandwiches are somewhat customizable too.  Use turkey pepperoni vs traditional pork/beef pepperoni, add crumbled sausage, etc.…you get the picture, so each family member can easily create their own yummy sandwich.

Start by adding 3 Tbsp unsalted butter to a microwave safe bowl.  Microwave for 30 seconds or until melted.  Add the parsley, Italian seasoning, garlic powder, and salt.  Stir to combine and set aside.  If you prefer to use salted butter, simply skip adding any additional salt.

Add 1 Tbsp unsalted butter to a skillet or griddle and melt over medium heat.

Place the 4 slices of bread onto the hot skillet.  I prefer to use sourdough bread, but you can use any bread of your choosing.  Texas Toast or a frozen garlic bread would also be a good option, just let it thaw slightly first so it toasts better in the skillet.

Top each piece of bread with 1 ½ slices of cheese.  You want to completely cover the surface.  I use sliced mozzarella cheese, but you can use any kind of cheese you want or any combination of cheeses.

Add pepperoni on top of each piece of bread.  I recommend adding about 8 slices of pepperoni to each piece of bread for a total of 32 slices but add as much or as little as you like.

Heat for 2-3 minutes.  Once the bottom of the bread is starting to turn golden brown and the cheese is starting to melt, flip one piece of bread onto the other, creating a sandwich.  Do this with both sandwiches.

Use a pastry brush to brush the melted butter mixture evenly over the top of each sandwich (only use about ½ of the butter mixture).

Flip the sandwiches over and brush the melted butter mixture evenly over the other side.  Continue to cook for 1-2 minutes or until the cheese is completely melted and the pepperoni is warmed through.

Remove from the heat and slice each sandwich in half.  Sprinkle with grated parmesan cheese.  If the sandwiches aren’t completely melted in the center, you can pop them in the microwave for about 30 seconds to finish the job.  Then sprinkle with parmesan cheese.

Serve immediately with marinara sauce on the side for dipping, and plenty of napkins because these are pretty greasy and messy!  Enjoy!

I’m pretty sure we had these for dinner 2 nights in a row because we liked them so much!  It’s hard to explain but all the ingredients complement each other so well.  And the marinara sauce is the icing on the cake.  It’s like dipping a grilled cheese sandwich in tomato soup.  So good!

The recipe is only for 2 sandwiches, but you will most likely have leftover ingredients if you need to make more than 2 or you can double/triple the recipe to account for your family members.
