For the finishing touch, a sprinkle of fresh chopped parsley adds a burst of color. Whether you’re cooking for a weeknight dinner or a special gathering, this Pan Fried Chicken with Rosemary Gravy is sure to impress. Let’s get cooking!

The recipe can be found here.

Start by seasoning both sides of the chicken with salt and pepper.  Then, melt the butter in a large skillet over medium-low heat.  Add the chicken and cook on each side for about 7-8 minutes or until cook through and an internal temperature of 165 degrees F is reached.  The butter is turn brown and that’s OK.  You can remove the chicken to a plate and set aside.

Slowly add the chicken broth and whisk until well combined, making sure to scrape any bits off the bottom.  Bring the broth to a simmer.  Add the heavy cream and stir to combine, then add the rosemary sprigs.  Bring the mixture to a simmer again and continue to simmer for about 5 minutes or until the gravy thickens.  If the gravy doesn’t thicken, whisk in 1 Tbsp flour, and continue to simmer for up to 5 minutes.

Add the chicken back to the skillet along with any juices from the plate and let the chicken cook in the gravy for 2-3 minutes.  Spoon some of the gravy over the top of the chicken.

Transfer the chicken to serving plates and spoon the gravy over the top.  Serve with a side of mashed potatoes or steamed veggies.
