Spice Up Your Morning with a Jalapeno Popper Omelet!

Start by adding the cream cheese, MOST of the bacon (you want to reserve some for topping), the diced jalapeno (save some to garnish), ¼ cup of shredded cheese, and green onion to a mixing bowl and mix until well combined.  Set the bowl aside.

In a separate bowl, whisk the eggs and heavy cream (or substitute milk).  Season with salt and pepper.

Melt 1 Tbsp butter in a medium sized skillet over medium-low heat.  Swirl the butter around the skillet to coat the bottom.  You are going to cook these omelets low and slow to prevent burning and to ensure all ingredients are heated through.

Pour ½ of the egg mixture into the skillet and let the eggs cook.  Carefully lift different parts of the edge of the egg and allow the liquid to seep underneath and continue to cook.  Once the eggs are mostly set, add ½ of the cream cheese mixture and gently spread about the omelet.  Use a spatula to fold the omelet in half and press down to hold together.

Sprinkle some shredded cheese and crumbled bacon over the top then garnish with a few slices of jalapeno.  Continue to heat until the cream cheese is warmed through.

Transfer the omelet to a plate and serve immediately.  Repeat these steps to prepare the second omelet.
