If you’re a jalapeno popper fan, I have a wonderful recipe for you!  It’s a Jalapeno Popper Grilled Cheese sandwich…and it’s incredible!  The bread is toasted to perfection, the jalapenos add the right amount of heat, the bacon is crisp and adds a hint of salt, and the combination of cheeses oozing out of the sandwich in each bite make it just perfect.

Start by cooking the bacon according to package instructions.  Place on a paper towel lined place to absorb some of the grease and set aside.  Pro tip – if you make extra bacon, you have something to snack on while assembling the sandwiches 😊

Next, preheat the oven to 375 degrees F and line a baking sheet with parchment paper.

Slice the jalapenos in half (lengthwise) and remove any seeds.  Fill each piece of jalapeno with cream cheese.  It doesn’t matter if the cream cheese is softened for this recipe because you are going to be baking it, so you can save the extra step.

Place the cream cheese filled jalapenos on a baking sheet and bake for 20-25 minutes.  The jalapenos will become soft and tender, and the cream cheese will start to soften and melt.  Remove the jalapenos from the oven and set aside.

Butter one side of each piece of bread.  Then, preheat a skillet over medium heat.

Place the bread, butter side down, in the skillet.  Add 1-2 slices of Monterey jack cheese to 2 pieces of bread.  Add 1-2 slices of cheddar cheese to the other 2 pieces of bread.  So….each sandwich will have Monterey and cheddar cheese.

 

the bread toast and cheese start to melt for about 2 minutes.  Check the bottom of the bread every so often to make sure it’s not burning.

Divide the cream cheese filled jalapenos between 2 pieces of bread (one half of each sandwich).  Break the bacon in half and divide between the other 2 pieces of bread (the other half of each sandwich).

Once the cheese has melted and the bottom of the bread is a nice golden brown, turn off the heat.

Fold the bacon/cheese piece of bread on top of the jalapeno/cheese piece of bread to create your sandwich.  Repeat with the other sandwich.  Slice in half and serve warm.  Enjoy!

This sandwich can’t be good for your cholesterol, but it will sure make your tummy happy, LOL!  It’s OK to indulge every so often so hopefully this sandwich is part of your next cheat day 😊
