I recently wrote a blog called Simple Summer Bruschetta Recipes and I’ve been craving something similar ever since.  I think bruschetta is the perfect summer appetizer because it’s easy to make, it’s a bite-sized snack, it’s customizable, and it tastes great!  One piece is never enough for me, so that’s why I like to prepare a variety and enjoy a smorgasbord of recipes 😊 Here are the recipes I have for you today: Roasted Tomato Bruschetta with Pesto Peach, Prosciutto, and Ricotta Bruschetta Cream Cheese, Avocado, and Dill Bruschetta   All are phenomenal in their own way.  The Roasted Tomato Bruschetta with Pesto has warm tomatoes that burst open while baking, and the sweetness really complements the pesto.  The Peach, Prosciutto, and Ricotta Bruschetta has juicy, ripe peach slices that pair well with the salty prosciutto.  The Cream Cheese, Avocado, and Dill Bruschetta reminds me of avocado toast and is something I would love to devour … Continue reading

Any recipe that is “no bake” is pretty amazing.  The recipes are typically simple to make and often don’t take a lot of time (just plan ahead so the pie has time to chill).  My favorite “no bake” recipes are for dessert.  You can make some delicious bars, pies, etc. without ever turning on your oven.  So, if you aren’t a baker or don’t have a lot of experience baking, these pies are for you! I like to consider myself a cookie connoisseur.  I have a few favorite flavors but will not pass up another variety when asked 🙂 When it comes to cookies, you can separate them into 2 categories – crispy and chewy. Bacon Jalapeno Crescent Roll Puffs is an easy appetizer or dinner recipe that will be a crowd favorite!  I say appetizer or dinner because the recipe is something most people would serve as an appetizer but if you eat enough of them (like we did) they can also be filling enough for an entire meal 😊 Think of this recipe as a spin on a traditional jalapeno popper.  You still have the jalapeno, bacon, shredded cheese, and cream cheese but instead of being stuffed inside the jalapenos, the ingredients are wrapped in crescent roll dough.  You get crispy bacon and spicy jalapeno, but the heat is cut by the combination of Colby jack and cream cheese.  The crescent roll dough creates this warm, soft, pillowy blanket to hold the ingredients together.  They are addictive! Jalapeno Popper Chicken Casserole is a favorite and easy to-to dinner when we are looking for something hearty and delicious.  It includes tender, juice chicken that is coated in a creamy mixture and topped with spicy jalapenos, shredded cheese, and crisp bacon.  This is a great recipe for lunch or dinner. The recipe can be found here. Start by cooking the bacon according to package instructions.  If you are using rotisserie chicken (which I highly recommend), remove the chicken from the bones and shred.  If you are using boneless skinless chicken breasts (which also work just fine), cook and cube or shred.  You want the meat to be pre-cooked before assembling the dish. Preheat the oven to 375 degrees F. Spread the chicken in the bottom of a 9×13 baking dish.  Season with garlic powder, paprika, and pepper (optional). If you’re a jalapeno popper fan, I have a wonderful recipe for you!  It’s a Jalapeno Popper Grilled Cheese sandwich…and it’s incredible!  The bread is toasted to perfection, the jalapenos add the right amount of heat, the bacon is crisp and adds a hint of salt, and the combination of cheeses oozing out of the sandwich in each bite make it just perfect. Start by cooking the bacon according to package instructions.  Place on a paper towel lined place to absorb some of the grease and set aside.  Pro tip – if you make extra bacon, you have something to snack on while assembling the sandwiches 😊 Next, preheat the oven to 375 degrees F and line a baking sheet with parchment paper. If you are searching for the perfect appetizer or side for your next cookout, look no further!  Grilled Jalapeno Poppers are the way to go!  They are stuffed with an addictive mixture of bacon, cream cheese, and cheddar cheese.  The rich and creamy combination of the stuffing contrasts the spicy jalapeno peppers leaving you wanting more. This is a great alternative to the breaded and fried version because they are fresh, cook up nicely on the grill, and are quite addicting 🙂 You can even skip the bacon for a vegetarian option if you prefer. Pumpkin Spice Season is upon us.  It symbolizes the end of summer and the start of fall.  I know summer isn’t officially over, and to be honest, I’m not ready to say goodbye to warmer weather, but I am going to enjoy some delicious pumpkin treats either way 🙂 I have a few go-to recipes to share with you today.  All are themed around, you guessed it, pumpkin spice.  It’s hard to say which recipe is my favorite because they are all delicious in their own way.  Luckily, because it’s still technically summer and not fall, I have even more time to enjoy them all! If you’re anything like me, you love pumpkin spice!  I know, I know, a lot of people are over the pumpkin spice craze but with so many recipes to try how can you not be intrigued by its deliciousness?  I personally think it should be a year-round item and not just seasonal, but it’s not up to me.  To fulfill my need for pumpkin I decided to have ‘pumpkin weekend’ at our house to hopefully get it out of my system (between us, it will never be out of my system 😊).
