I’ve been a big fan of “bowls” lately.  For example, instead of eating a stuffed bell pepper, I would eat the ingredients tossed together in a bowl.  Or instead of having an egg roll, the ingredients would be in a bowl….you get the picture.  My most recent bowl idea is for a Mediterranean Chicken Bowl.  It has a lemon-dill rice, wonderfully seasoned Greek chicken, a fresh cucumber and tomato salad, and yummy tzatziki sauce to bring it all together.  The flavors are rich and vibrant, and incredibly fresh.  It’s a light and healthy meal the whole family will love!

This is really a 4-part recipe.  You must prepare the tzatziki sauce, cucumber tomato salad, chicken, and rice.  I like to start with the tzatziki sauce and salad because those can be refrigerated while you prepare the chicken and rice.

For the tzatziki sauce, combine the shredded cucumber, Greek yogurt, lemon juice, dill, garlic powder, salt, and pepper in a small bowl.  Mix well, then cover and refrigerate until ready to serve.

I use a cheese grater to shred the cucumber.  Then I wrap it in a few paper towels and wring out the liquid.  Try to get as much liquid out as you can.

For the cucumber tomato salad, combine the cherry tomatoes, cucumber, onion, olives, parsley, red wine vinegar, olive oil, salt, and pepper in a large bowl.  Toss to combine. Then cover and refrigerate until ready to serve.

You can leave the tomatoes and olives whole if you prefer, otherwise slice in half.

For the rice, start by cooking the rice according to package instructions.  You can use white or brown rice for this recipe.  When the rice is just about done, add the lemon juice, dill, salt, and pepper.  Stir to combine.  I recommend tasting the rice as this point and adjusting the seasoning, as necessary.  If you are satisfied, cover the rice, and set aside until the chicken is done.

While the rice is cooking, prepare the chicken.  Start by heating oil in a large skillet over medium heat.  Add the ground chicken and start to break it apart into little chunks as it cooks.  Once the chicken is about ½ done, add the onion and stir to combine.

Add the oregano, garlic powder, cumin, cinnamon, salt, and pepper.  Stir to combine.  You want to finishing cooking the chicken completely at this point.

 

Add the parsley, lemon zest, and lemon juice.  Stir to combine.  Reduce the heat to low and simmer the mixture for about 5 minutes to absorb the flavors.  Remove from the heat.

Finally, you are ready to assemble.  Start by scooping the rice into the bottom of each bowl.  You can use a plate for this recipe, but I’ve found a bowl works quite well and is easier to mix the ingredients together.  Top with the ground chicken mixture.  Then add the cucumber-tomato salad and a dollop of tzatziki sauce.  Sprinkle on some crumbled feta cheese and you are ready to dig in!

What do you think?  I think it’s best if you stir everything in your bowl together before eating, then you get a little bit of every flavor in each bite!  It’s light and refreshing, and a very colorful meal.  You’ll feel satisfied and might even have some leftovers for lunch the next day 😊
