Ratatouille (Vegan)
Ratatouille (pronounced rat-tuh-too-ee) is an incredibly colorful and healthy dish! Ratatouille is typically a stewed vegetable dish that’s packed with fresh product; anything from tomatoes, eggplant, zucchini, squash, bell pepper, onions, etc. You can include all of the vegetables listed above or just a few. Personally, I like to use onion, zucchini, yellow squash, and tomatoes. The recipe can be found here. Preheat the oven to 350 degrees. Lightly spray a 6×9 baking dish with olive oil spray and set aside. You can also use an 8×8 baking dish if you don’t have a 6×9 baking dish. Vegan Vegetable Pot Pie
Vegan Vegetable Pot Pie is my new favorite dish! It’s a great comfort meal that’s packed with vegetables and a wonderfully flaky crust. Very cozy and delicious 🙂 The recipe can be found here. Start by making the Vegan Pie Crust. The recipe can be found here. Add the dry ingredients to a food processor and pulse a few times to mix together. Then add the butter and shortening to the food processor and mix together for about 10 seconds. The dough will be pretty flaky at this point. Slowly pour in the cold water while the food processor is running. The dough should start to clump together. Remove the dough to a flowered surface and use your hands to form the dough into a ball. Air Fryer Chicken Potstickers and Cream Cheese Wontons
Air Fryer Chicken Potstickers are super flavorful and surprisingly easy to make! Plus, they are super versatile because you can fill them with anything you want. Potstickers cooked the traditional way are amazing, but have you ever considered cooking them in an air fryer? It’s a great way to get a crispy crust without too much added oil. The recipe can be found here. Start by combining the ground chicken, water chestnuts, green onion, minced onion, soy sauce, rice vinegar, garlic, and ginger in a bowl. Stir until well combined or use your hands to combine (this is almost easier to blend everything together). Place 16 potsticker wrappers on the counter. We recently purchased an air fryer to see what the hype is all about – it’s pretty awesome! Our first meal consisted of Air Fryer Lemon Pepper Chicken Wings and Air Fryer Homemade French Fries. Unstuffed Cabbage Rolls (Vegan Dish)
Cabbage rolls are a delicious dish consisting of cooked cabbage leaves that are wrapped around a variety of filling. They do require quite a bit of work to make so I thought why not make the same delicious dish in casserole form. No rolling, no stuffing, just mix and bake… This leaves you with Unstuffed Cabbage Rolls. I also wanted to make the dish vegetarian or vegan. Pineapple Shrimp Skewers
We love to grill, and we love seafood, so we combined the two to create Pineapple Shrimp Skewers. These are prefect for a lighter dinner and come together so quickly! Plus, you can customize the skewers to different tastes by adding different fruits or veggies to accompany the shrimp. They are sweet yet citrusy, and very delicious! The recipe can be found here. Start by combining the coconut milk, hot sauce, soy sauce, lime juice, and orange juice in a bowl. Pour into a Ziplock bag, then add the shrimp to the bag and toss to coat. Chicken Satay with Peanut Sauce
Chicken Satay with Peanut Sauce are perfectly grilled chicken strips that have been marinated in a flavorful sauce. They are perfectly sweet and tangy and make an easy dinner. Don’t forget to drizzle the leftover peanut sauce on top of the skewers before serving! The recipe can be found here. Start by slicing the chicken breasts into strips and set aside. Then prepare the marinade by combining the yogurt, ginger, garlic, and curry powder in a mixing bowl. Add the chicken to the marinade and toss to coat. Vegan Meals
We recently committed to a vegan diet for about 2 weeks and have to admit, it was delicious! We had done this once before, but enough time had passed that we wanted to try some different foods and see how we could handle meals without any meat, once again. We both lost weight, our bodies felt great, and we enjoyed creating recipes. It might be surprising, but some types of food you already eat are vegan, like pasta, if you skip the cheese and use a red sauce. If you’re up for the challenge, I recommend starting with a week of vegan eating. If it works out well, try for another week. Baby step your way into it! We don’t plan on going vegan by any means. French Toast Bake
French Toast Bake combines all your favorite French Toast flavors in one baking dish that is easy to make and delicious to eat! It’s a favorite make-ahead breakfast dish in my household. You prep the French Toast Bake the night before, refrigerate overnight, and bake and enjoy in the morning. Super easy with no fuss! The recipe can be found here. Start by cutting the bread into 1-inch pieces. I like to use either sourdough or French bread. You can buy pre-sliced bread or whole bread. Then place the bread pieces in a greased 9×13 pan. Homemade crepes are perfect for any occasion! They are thin, tender, and easier to make than you think 🙂 You only need 6 ingredients to make these French-style homemade crepes. No blender or special pan required (although it does help). The recipe can be found here. Start by combining the eggs, milk, flour, butter, vanilla, and salt in a mixing bowl. Whisk together until smooth – you don’t want any chunks in the liquid! Then let the batter rest for about 10 minutes. I have a crepe pan that I like to use but you don’t need a special pan to make crepes, you just need a flat-bottomed non-stick skillet. You want to heat the pan over medium heat.
