Brunch is a widely popular weekend activity.  Who doesn’t love meeting up with friends and family to enjoy some wonderful breakfast food and maybe a cocktail or 2?  With spring right around the corner and Easter coming up, I thought it would be fun to share some of my new breakfast recipes, and perhaps get you out of the winter slumber and motivated to host a get-together.  Here are the recipes I’ve been working on: Pepperjack Baked Eggs Pepperjack Baked Eggs Breakfast Sandwich Strawberry Cream Cheese French Toast Bake Sheet Pan Cheesy Hash Browns All are relatively easy to make and taste aaaaaamazing!  I’ll walk you through how to make each recipe and give you some tips along the way. We are in the midst of apple season in MN has some of the best orchards around!  Prime apple picking is mid-to-late August through late October and makes for a wonderful family tradition!  Our family went to a local apple orchard recently and it was a blast.  We enjoyed some delicious apple treats, took a nice walk through the orchards, picked out a pumpkin to bring home, and just had an all-around good day. Most people have a favorite kind of apple but with so many varieties to choose from, I think it’s hard to pick.  And different kinds work for different recipes, so you have the option to sample different flavors while you cook and try out new recipes. It’s that time of year…. fall…. or pumpkin spice season, as some like to call it.  I did a little research on the fall phenomenon that is pumpkin spice and was quite intrigued by my findings.  Did you know that pumpkin spice earned its name because it was originally used in cakes and pies that contained pumpkin?  I didn’t but McCormick (the seasoning brand) started marketing the spice to save consumers the effort of having to make their own homemade version and could instead buy the spice at their local grocery store.  Pretty cool, huh? The spice mix is generally a blend of ground cinnamon, nutmeg, ginger, cloves, and sometimes allspice.  I admittedly have all these spices in my cabinet but understand that not everyone else does, so I can make homemade pumpkin spice if needed, but something the store-bought version is easier 🙂 I also learned that cravings for … Continue reading

Monte Cristo Sandwiches are my new go to sandwich!  They are served warm, so the cheese is perfectly melted, the bread is toasted, and the meat just seems to be extra tender and juicy.  It’s not quite a panini, because you aren’t pressing the sandwich or grilling it, but instead you are baking it.  I like to use French Toast as the bread as well.  It adds a little extra something to each bite! The recipe can be found here. Start by cooking the bacon according to package instructions.  Set aside. Preheat the oven to 300 degrees F and line a baking sheet with parchment paper. Make the French Toast.  In a shallow dish, whisk together the eggs, milk, and cinnamon.  A pie plate or small baking dish works really well for this. French Toast Bake combines all your favorite French Toast flavors in one baking dish that is easy to make and delicious to eat!  It’s a favorite make-ahead breakfast dish in my household.  You prep the French Toast Bake the night before, refrigerate overnight, and bake and enjoy in the morning.  Super easy with no fuss! The recipe can be found here. Start by cutting the bread into 1-inch pieces.  I like to use either sourdough or French bread.  You can buy pre-sliced bread or whole bread.  Then place the bread pieces in a greased 9×13 pan.  You want the bread to be layered pretty evenly. In a mixing bowl, combine the eggs, milk, heavy cream, sugar, and vanilla.  Pour the mixture evenly over the bread, making sure to coat every piece. It’s the time of year for all the pumpkin flavored lattes, pancakes, cookies, pasta, etc. starts popping up.  If you can eat it, I’m sure someone has tried adding pumpkin flavoring to it!  It’s a craze that I’m more than happy to participate in 🙂 But, another fall favorite I don’t think gets enough credit is apple cider. I thought it would be fun to do a taste test of pumpkin vs apple cider with breakfast foods to see which the fan favorite is.  I made the same two items with both flavors.
