Simple Summer Bruschetta Recipes
We recently had dinner at a local Italian restaurant and ordered a variety of Bruschetta as an appetizer. I’ve been thinking about the Bruschetta ever since and couldn’t resist the attempt to recreate it at home. Who doesn’t love a crunchy Bruschetta appetizer? And who doesn’t love options? That’s what I have for you today! Four vastly different yet incredibly satisfying Bruschetta recipes. When I think of Bruschetta, I typically think baguette with fresh tomatoes and maybe some basil or balsamic dressing. Have you ever eaten something and thought “this is the only way I can ever eat this again”? That happened to me with this sandwich. Don’t get mad, but I have to admit I’m not really a fan of BLT’s. They are fine sandwiches but there isn’t much to them. It’s like they are missing something, and I think I found out exactly what’s been missing. You have to revamp the entire sandwich…. bread and fry the tomatoes, candy the bacon, make a delicious aioli, and eat it all on a pretzel bun. Turkey Burgers w/ Cranberry Aioli
Right around this time of year I get a craving for a turkey dinner…. a nice plate full of my favorite Thanksgiving foods. But, that’s just too much food on a hot summer day. I decided to create a recipe that not only reminds me of Thanksgiving but is light enough for summer. I give you the Turkey Burger with Cranberry Aioli. The turkey burger is full of flavorful herbs and when you combine it with the cranberry aioli you have the perfect burger. It’s a great blend of sweet and savory with a lean and juicy burger. Start by making the cranberry aioli. Combine the mayo, Dijon mustard and cranberry sauce until well mixed. It might be a little lumpy and that’s OK.
