We recently had dinner at a local Italian restaurant and ordered a variety of Bruschetta as an appetizer.  I’ve been thinking about the Bruschetta ever since and couldn’t resist the attempt to recreate it at home.  Who doesn’t love a crunchy Bruschetta appetizer?  And who doesn’t love options?  That’s what I have for you today!  Four vastly different yet incredibly satisfying Bruschetta recipes. Italian Nachos are simple and easy to make!  They are loaded with crispy fried wonton wrappers, spicy Italian sausage, pepperoni, banana peppers, melty cheese, and marinara sauce for dipping.  They make a satisfying meal or can be served as an appetizer.  They are also great for game day, a potluck, family game night…anytime you want yummy snacks 😊 They are delicious and packed with tasty ingredients. Start by heating a skillet over medium heat.  Add the spicy pork sausage or plant-based meat and cook until cooked through, about 8 minutes.  Remove from the heat and set aside.  I did use Impossible Meat when I made this recipe (the spicy ground package) however you can use any spicy ground meat of your choosing.  I had always wanted to try the spicy plant-based meat, and this gave me a good excuse to try it.  It was quite spicy and tasted just like ground pork. It’s my favorite time of year!  The weather is starting to cool down, the leaves are starting to change, and you can find pumpkin spice at just about any store.  That’s what I’m talking about when I say my favorite time of year…. all things pumpkin spice.  I love the flavor, but I also love that it’s available for a limited time, so it’s something I look forward to enjoying. Spring will be over before you know it and as we get into the summer months, you might be looking for something fun for the kids to do over summer break.  Why not make a fresh batch of cookies?  (And then send them outside to recover from the sugar rush) 😊 There is nothing like fresh baked cookies, right out of the oven.  I always have to sample one off the baking sheet (for quality control purpose) before they are even cooled enough to transfer to a cooling rack.  Am I a monster?  Yes.  But so are the 1st cookies I want to share with you today 😊 Monster Cookies are giant in size and truly the best!  They are loaded with peanut butter, oats, butterscotch chips, chocolate chips, and M&M’s, so you are essentially combining aspects of your favorite cookie into one super-sized cookie.  They are thick, chewy, and a crowd pleaser! I love to eat apples year round but there is something special about eating apples in fall; the weather is getting cooler, colors are starting to change, and apple-picking season is upon us. They are crisp, sweet, refreshing, and a true symbol of fall. One of my favorite snacks to make in the fall is Apple Salsa. It’s something I had years ago at a local apple orchard and absolutely loved it! I knew I had to recreate it and spent hours trying to do so, and think I have the recipe perfected! The recipe can be found here. It’s the perfect combination of sweet and spicy. I think it’s more sweet than spicy but there is a subtle spicy undertone. I’ve been excited to write this post since I originally had the idea! Most of my posts so far have been about food but why stop there? I thought I could write about wine…delicious wine 🙂 For the winos and fitness enthusiasts out there, this is something you’ll want to try! It’s called FitVine and is considered “clean wine”. Don’t worry; I’ll explain what I mean by “clean wine” later. It started with 3 friends that wanted to create a wine that fit their very athletic and constant moving lifestyles…so they created FitVine. There are 5 kinds of FitVine available, Cabernet Sauvignon, Chardonnay, Pinot Grigio, Pinot Noir, and Sauvignon Blanc. These wines are very clean tasting and have a lot of flavor but still have the alcohol content you would expect from a glass of wine. One of my favorite seasonings is Everything Spice. It’s a combination of toasty, salty, and savory that makes every bite that much more delicious. And it goes on, well, everything! We like to make soft pretzel bites to have as an appetizer at holidays, a family get-together, game night, etc. They are a crowd favorite and usually don’t last long…but that’s probably because we tend to pair them with alcohol (who’s keeping track?) 🙂 This time we were feeling adventurous and wanted something a little different from traditional soft pretzel bites so we made Buffalo Cheddar Soft Pretzel Twists with, you guessed it, EVERYTHING SPICE!!! I understand this recipe can be daunting but trust me…it’s delicious! The cheese oozes out as you take your first bite, the buffalo sauce adds the perfect amount of heat, and the everything spice adds a salty flavor. It’s a busy time of year with summer coming to an end, school starting, preparing for fall and all the delicious food that comes with it (more on that later) but we were able to squeeze in one more weekend at the cabin!  We opted for a fairly simple menu because the weather was perfect and we wanted to make the most of the holiday weekend by spending as much time outside as possible. Let’s be honest, no one is up early at the lake, but when we do get up we are ready for some Bloody Mary’s and breakfast.  Our favorite is Tito’s Vodka with equal parts Tomato Juice and Clamato plus all the fixings!  We used Ellsworth, WI Cheese Curds, pickles, and summer sausage for our skewers.  Refreshing and a great way to start the day!
