We recently had dinner at a local Italian restaurant and ordered a variety of Bruschetta as an appetizer.  I’ve been thinking about the Bruschetta ever since and couldn’t resist the attempt to recreate it at home.  Who doesn’t love a crunchy Bruschetta appetizer?  And who doesn’t love options?  That’s what I have for you today!  Four vastly different yet incredibly satisfying Bruschetta recipes. We are in the midst of apple season in MN has some of the best orchards around!  Prime apple picking is mid-to-late August through late October and makes for a wonderful family tradition!  Our family went to a local apple orchard recently and it was a blast.  We enjoyed some delicious apple treats, took a nice walk through the orchards, picked out a pumpkin to bring home, and just had an all-around good day. Most people have a favorite kind of apple but with so many varieties to choose from, I think it’s hard to pick.  And different kinds work for different recipes, so you have the option to sample different flavors while you cook and try out new recipes. Can you believe Thanksgiving is almost here?  It’s been an interesting year (to say the least), so I’m looking forward to the holidays.  Although, the holidays might look a little different this year.  We still plan on seeing our immediate families for a nice Thanksgiving meal but will keep our gathering to 4-6 people.  We will miss traveling, seeing extended family, participating in some Black Friday shopping, and more this Thanksgiving, but will savor the time we do have with the few we choose to celebrate with…socially distanced with some delicious food 🙂 We are going to start our day with a nice fall-themed charcuterie board.  You need something to snack on while you cook, right?  If you’ve never made a charcuterie board before, you are in for a treat.  They are very simple to make, can include as many or as few ingredients as you choose, and make a … Continue reading

Looking for a warm, healthy, and filling breakfast on a cold winter morning?  Look no further than Instant Pot Apple Cinnamon Oatmeal!  It cooks up perfectly in little to no time, only takes one pot, and will leave you feeling very cozy 🙂 It’s the perfect combination of warm and fluffy oatmeal, apples, and cinnamon.  Even better, the recipe is vegan, if you lead a vegan lifestyle. Start by chopping the apples into small pieces.  You essentially want to dice the apples.  A portion of the apples are going into the oatmeal to cook in the Instant Pot.  The rest of the apples will be used as topping. Apple Cider Chicken & Apples is the ultimate fall dish!  Think juicy chicken, tender apple slices, the crisp taste of apple cider……my mouth is watering just thinking about it 🙂  Your whole kitchen will smell like fall with this dish.  It’s a healthy and simple fall meal. The recipe can be found here. Start by heating a large skillet over medium-high heat.  Add the olive oil and onions and cook until soft and translucent. Then add the chicken, season with salt and pepper, and cook until the chicken is about 80% done.  You only want to cook the chicken about 80% of the way because it will continue to cook while you prepare the rest of the dish.  Make sure to stir frequently so all sides of the chicken heat evenly. With the low temperatures we’ve had lately I want to hunker down and have a hot meal after work.  Chicken Apple Chili is my new favorite go-to meal!  It’s a bit non-traditional but is very easy to assemble, is light and refreshing, and is the perfect fall meal.  Plus, it comes together in just a few hours (set it and forget it) so you aren’t waiting 4-8 hours like traditional chili. The recipe can be found here. You need a slow cooker for this one-pot recipe.  Add all ingredients to the bowl of the slow cooker, except the apples, and stir together.  Cover and cook on high for 2 hours.  Serve with chopped apples on top.  Easy peasy! With the temperatures starting to drop I’ve been craving something warm and hearty for dinner.  My criteria is the dish has to be hot, filling, seasonal, and something good enough (and big enough) to have leftovers.  I ended up with the following: Pumpkin Dinner Rolls Apple Cheese and Beer Soup Banana Cookies with Brown Sugar Cream Cheese Frosting   The Pumpkin Dinner Rolls are homemade.  Sure, you can buy store-bought rolls if you prefer but there is something about the smell of bread baking in the oven that gets me every time.  The bread is fresh (literally right out of the oven), warm and so easy to pull apart to eat. I recommend using a stand mixer to make these rolls but it’s OK to mix by hand if you don’t have a stand mixer – you’ll just get quite the arm workout!
