Instant Pot meals are quickly becoming a favorite of mine on night we are busy and don’t have a lot of time to spend cooking but still want a nice meal.  We probably use our Instant Pot more in the fall and winter than we do in the spring and summer because it’s great for warm and hearty meals.  Recently we made Instant Pot Chicken Bruschetta Pasta.  It was delicious! The chicken was moist and tender, the noodles were al dente (I hate when they become too soft and mushy), and the bruschetta topping added some lovely color and a bit of freshness to the dish.  The flavors pair well together and left us feeling quite satisfied! Every so often I like to make a vegan dish for a few reasons.  First, the food is actually delicious (don’t knock it ‘til you try it) and second, I have friends and family members who are vegan (or follow a similar diet), so I like to have a few recipes in my back pocket in case I’m ever entertaining them.  I’d rather be accommodating so they know they can comfortably eat at my house than have them eat before coming over.  And truly, the food is quite good, in addition to being good for you! Valentine’s Day is just around the corner and I’m feeling the love.  Our house is decorated with everything red and pink, I’ve picked out the perfect Valentine for my sweethearts (yes, I’m including the dog 😊), and we have a wonderful menu planned.  A lot of people like to go out to eat on Valentine’s Day and there is nothing wrong with that, but we usually opt to stay in and prepare a nice meal together.  It takes away from the rushed atmosphere you often feel at a restaurant on a busy day and allows you to really spend time together and do something fun together.  We both love to cook so it’s the perfect option for us!    The menu we prepared has a few new items, but everything is easy to make.  We’ll start with a Caprese Salad appetizer and use a heart-shaped cookie cutter to make the … Continue reading
