Memorial Day weekend with friends or family at the cabin means it’s time to break out the recipes and get a menu together. We believe that for the hosts to enjoy the weekend as much as their guests you must keep it casual with everyone pitching in to prepare meals and cook together. We always plan for extra food because face it, if the weather is beautiful more company than planned are likely to show up and there’s never anything wrong with delicious leftovers. Just make sure you have plenty of refreshments to go around.   Stay hydrated, people! The fresh wild Halibut filets in our stores right now are fabulous, Halibut is delicious whether baked, sautéed, grilled, or broiled and I can’t get enough of it! My personal favorite recipe is Halibut with Leeks and Spinach! The prep is easy and don’t count on having leftovers because there will be clean plates! One thing I do not enjoy when preparing fish is removing the skin from the fish and our staff at the chefs counter will remove the skin for you if you ask them. The snow is still falling but a sure sign that spring is upon us: first of the season fresh wild Halibut fillets will arrive in the stores tomorrow! Whether you bake, broil, grill, or poach this firm white fish it is delicious. One of our favorite meals is Tacos, no matter what kind! We prefer soft shell tacos and  love to experiment with different fillings. Our favorite new filling is Buffalo Chicken using our favorite wing sauce Wing-Time. We think you will love this Buffalo Chicken Taco with Guacamole recipe. We really enjoy the chicken cubed rather than shredded in this recipe.  Dredging the chicken in the flour mixture makes the wing sauce adhere to the chicken cubes when you assemble the tacos. While many taco recipes have green onions, avocado, cilantro and peppers; we believe it is easier to just make our Chunky Guacamole recipe for the filling. Rather than sour cream we prefer to use Taco Fiesta Top the Tater, a sour cream dip that is seasoned perfectly for tacos. We are also crazy for Fish Tacos with Chunky Guacamole.
