Pimento Mac & Cheese
Pimento Mac & Cheese is an easy weeknight skillet meal the whole family will love! It’s packed with flavor and combines 2 of my favorite things….mac and cheese and pimento cheese. I personally think pimentos are underutilized in recipes, so this is a great recipe for them to shine. I can’t wait to make it again! The recipe can be found here. Start by preheating the oven to 350 degrees F and use 1 Tbsp softened butter to grease a 10-inch cast iron skillet. Bring a pot of water to a boil and cook the noodles until al dente. You don’t want to overcook and make them mushy. Drain the noodles and set aside. While the noodles are cooking, make the cheese sauce. Melt 2 Tbsp butter in a large saucepan over medium-low heat. Instant Pot Buffalo Chicken Mac & Cheese
Instant Pot Buffalo Chicken Mac & Cheese is a great one-pot meal that will blow your mind! It’s a twist on traditional mac & cheese that is easy to make and done in minutes. It’s super cream, full of tender chicken, and has a great spicy and tangy flavor from the addition of buffalo sauce. The recipe can be found here. Start by slicing the chicken into bite sized pieces. Add the chicken to a bowl and season with salt, pepper, and garlic powder. Toss to coat all pieces. Turn on the sauté function of the Instant Pot. Add a small amount of oil. I like to use avocado oil or coconut oil, but olive oil works just as well. Add the chicken and cook until cooked through, about 5-7 minutes. Vegan Buffalo Mac & Cheese will make your dreams come true one bite at a time. It’s the ultimate comfort food! Each bite is creamy, loaded with buffalo spice, and has the slightest crunch from toasted breadcrumbs. It’s the perfect recipe to take your dinner game to the next level. St Paddy’s Provisions
St Patrick’s Day is a fun holiday for everyone! You can usually find some type of celebration around town whether it be a parade, green beer at your favorite bar or specials on Irish food at restaurants. Even if you aren’t Irish, it’s fun to participate in the festivities. We like to watch the parade and enjoy an adult beverage with the dressed-up crowds (the people watching is phenomenal), then head home for a feast! Some years we like to enjoy traditional Irish food but other years we like to take a favorite dish and add and Irish twist. It really depends on what we feel like cooking that day! Halloween might be Andrew’s favorite holiday and it’s a close second for me. Temperatures are dropping, you have to pick out your Halloween costume, decorate your house, get ready for trick-or-treaters, and the list goes on. I particularly like all the spooky food you can make for a Halloween party or just for fun! Below are a few new recipes and ideas you can try out to make the most of Halloween. Cutout Cheese and Crackers This is probably the easiest snack you can make. All you need is sliced cheese, crackers, and Halloween shaped cookie cutters. Use cookie cutters to cut different shapes out of the cheese slices. I picked Colby Jack and Cheddar cheese but you can use any flavor of sliced cheese.
