Chicken Bacon Ranch Meatloaf
Meatloaf is a wonderful comfort food and if you’re from the Midwest…it’s a bit of a staple. It’s one of those meals you either love or hate. If you hate it, you probably ate it too much as a kid 😊 but I think you should give it one more chance and try my Chicken Bacon Ranch Meatloaf. I’m a chicken-bacon-ranch fan and consider myself to be somewhat of a CBR (chicken-bacon-ranch) connoisseur. If it’s available at a restaurant in some capacity, chances are I’ll order it. I think it’s delicious and love the flavor combination. The recipe can be found here. Start by preheating the oven to 350 degrees F. Line a standard size loaf pan with parchment paper. This will help you lift the meatloaf out of the pan after cooking, making it easier to slice and serve. Open the jar of bacon bits and reserve ¼ cup. In a large mixing bowl, combine the ground chicken, breadcrumbs, dried minced … Continue reading

Stuffed Chicken Parmesan Meatloaf
Chicken Parmesan is a classic dish and meatloaf is a family tradition shared by many so why not combine the 2? The result is Stuffed Chicken Parmesan Meatloaf. Buffalo Chicken Meatloaf
Meatloaf is the epitome of comfort food. And this time of year, we are all looking for something warm, hearty, and comforting to beat the cold temperatures. What’s better than meatloaf? Try Buffalo Chicken Meatloaf. It has the traditional texture and shape of meatloaf but is made with ground chicken. The hot sauce or buffalo sauce brings the heat, but it’s balanced by creamy blue cheese. This is a dish that is perfect for a weeknight meal and makes great leftovers. If you are buffalo sauce fan, I recommend you give it a try! The recipe can be found here. Start by preheating the oven to 350 degrees F and spray a loaf pan with cooking spray. Alternately, you can line the loaf pan with parchment paper to make removing the meatloaf easier. Add the ground chicken, breadcrumbs, celery, blue cheese, and onions to a large mixing bowl. Mix until well combined and set aside. I’m not the biggest … Continue reading

Haunted Hullabaloo
Halloween is fast approaching. For some, Halloween is a lifestyle and obsession, for others, it’s a day to be someone or something else. I personally love decorating the house, buying candy to pass out to trick-or-treaters, dressing up the dog…. but mostly, I love the food! I like to take a traditional dish and “dress it up” for Halloween. For example, a pepperoni pizza might have the pepperoni in the shape of a jack-o-lantern. You get the picture 🙂 This year, I have quite the spread. It’s going to be one big Halloween celebration at our house, starting with breakfast, and ending with dinner. Here’s what’s on the menu: Eyeball Donuts Spider Web Donuts Candy “Charcuterie” Board Eyeball Asparagus and Gruyere Tart Spider Web Loaded Potatoes Festival Feetloaf Mini Skeleton Cheesecakes Halloween is full of candy and treats so why not start the day with something sugary? Eyeball … Continue reading
