‘Tis the season for some festive food and what better way to celebrate the holidays than with pancakes!  Kidding…kind of 😊 Pancakes are one of those items we have once or twice a year but when we do have them, we remember how much we enjoy them.  They are filling, a hearty meal for cold weather, can be enjoyed any time of day (raise your hand if you’re a fan of brinner…breakfast for dinner), and can be prepared in a variety of flavors.  Since it is holiday season, what better way to enjoy pancakes than in some traditional holiday flavors?  That is my goal with this blog post; to provide you with some yummy new recipes and hopefully give you recipe ideas for Christmas morning or another meal around the holidays. Sheet Pan Pancakes are like one giant perfect pancake!  Once you make these or try these, there is no going back.  No standing at the counter flipping pancakes for an hour over the griddle!  Simply bake, slice, and devour.  They are moist, fluffy, and easy to assemble. The recipe can be found here. Start by preheating the oven to 425 degrees F.  Generously spray a baking sheet (11×17 size) with cooking spray. In a large mixing bowl, whisk together the pancake mix, milk, and eggs.  Any brand of pancake mix will work just fine. Pour the batter onto the prepared baking sheet.  It might look like the batter isn’t filling much of the baking sheet, but it will rise as it bakes so you don’t need to add additional batter.  If you do, your pancakes will turn out more like cake! Mini Pancake Muffins are my new favorite breakfast treat!  They are both a pancake and muffin, so you get the best of both worlds.  Plus, they are mini / bite-sized pieces so you can enjoy a variety or all of the same kind, and not feel bad about how much you eat 🙂 The first recipe is for Mini Pancake Muffins.  These are essentially plain pancakes in mini muffin form.  The recipe makes 24 mini muffins, so I kept 8 plain flavored, made 8 chocolate chip flavored, and made 8 blueberry flavored.  I do have a sweet tooth, so the chocolate chip were my favorite but all tasted amazing! Can you believe it?  Easter is right around the corner.  With all that is going on in the world these days I’m starting to lose track of time.  What is typically a day of family and friends gathering together will most likely be spend apart or perhaps in very small groups.  This puts quite the strain on menu planning when you won’t be hosting, won’t be attending the usual get-together, or are just trying to maintain social distance. One of our favorite dinners growing up was “Dad’s Pancakes” made from scratch and unbelievably fluffy. The pancakes were always served with what is now referred to as simple syrup, we referred to it all those years ago as sugar syrup. While I would like to tell you that I continue to make Dad’s recipe, my time does not allow that to be the case, but that doesn’t stop us from enjoying pancakes for dinner! There are many good pancake mixes, I like a complete mix where all you have to do is add water, a quick and easy way to feed the family for dinner, add some “little sizzlers” or bacon with a giant glass of milk and your family will be very happy. When I was constructing the Menu plan for this week and testing some recipes I realized I needed some ingredients for the menu.  What a wonderful option to be able to go on line and place an order for groceries delivered on the same day. Our Festival Express Grocery Delivery service has received wonderful reviews give it a try! This week’s menu includes a Chicken Enchilada recipe from Rick at our White Bear store.  I love chicken enchiladas and best of all it is another recipe that you can use our rotisserie chicken if you don’t have time to cook the fresh chicken. One of our family’s favorite meals is on the menu this week,  it is Pork Medallions with Mustard-Chive Sauce. We like to serve this with baked potatoes at our house.
